You like the new look of Picky Palate? I was ready for a little change!
Phew, what a crazy week I’m having. Busy Busy Busy, but somehow I seem to always manage to cook! Yesterday I was on AZ Midday, demonstrating a mac and cheese recipe, which is a news type show where there are all sorts of guests. My “Comfort Foods” show comes on Food Network this Sunday night, so Food Network has been setting some of the finalists up with news shows, newspaper articles etc… Long story short, while I was doing my demo yesterday, I didn’t have time to add the chicken mixture to the mac and cheese, so I brought it home and here it is in these yummy taquitos.
You can certainly bake these instead of frying them in a skillet like I did, whatever you are in the mood for. These are great for lunch or a light dinner. Gotta run, I’m teaching a group of young girls how to cook dinner tonight!! You’ll love these taquitos. My mac and cheese recipe is coming soon!
Anyone thinking this chicken recipe sounds familiar? It is the same chicken that is in my National Cornbread Recipe. Not only was it great in the cornbread recipe, it’s great in these taquitos and awesome in my mac and cheese that I’ll post soon. Yum!
Tempting Shredded Chicken Taquitos
2 tablespoons extra virgin olive oil
1 (14 1/2 oz.) can diced tomatoes with green chilies
3 Tablespoons vegetable oil
burrito size flour tortillas
1. In 10-inch non stick skillet, heat olive oil over medium heat. Add onion, bell pepper and jalapeno pepper; cook 3 to 5 minutes or until vegetables are tender, stirring frequently. Stir in chicken, 3 tablespoons cilantro, salt, cumin, pepper and tomatoes with green chilies; cook 5 minutes.
2. Place oil into large skillet over medium heat. Place about 2 large Tablespoons of chicken mixture into each tortilla. Tightly roll, securing ends with toothpicks. In batches, place taquitos into hot pan. Pan fry until nice and golden brown on each side. Remove, transfer to a paper towel lined plate to dry. Serve and enjoy!
Shredded Chicken Taquitos
Ingredients

- 3 tablespoons cilantro leaves finely chopped
- ½ teaspoon salt
- ½ teaspoon cumin
- ¼ teaspoon black pepper
- 14 ½ ounces diced tomatoes with green chilies (I used 1 14.5-oz can)
- 3 tablespoons vegetable oil
- flour tortillas burrito size
Instructions

Yum!! These were really great! I ended up baking mine on 375 for about 30 minutes ; lightly oiled, turning half way through cooking, and then sprinkled some cheese on top during the last 5 minutes. I slathered them in guac. and served with black beans. They were a tiny bit spicy for my girls.
I might even add some sour cream to the chicken mixture next time. Great meal!!

Ok, so I've only tried your berry white chocolate blondie recipe, although my husband wishes I would make all your dessert ones. Anyway, these Taquitos are DELICIOUS! Love them. They were fabulous with fresh produce from the farmer's market. These are going on the dinner rotation list. Thanks.

Hi there, I absolutely love this recipe thanks so much for posting it. Just had a quick question. You mentioned baking them instead of frying. Can you give some details in regards to that like, the temperature and how long. Also, would you go ahead and fry the flour tortillas and roll them and then put them in the oven or is there another way to do it? Thanks, God bless. 🙂

I would bake these at 375 for about 20-25 minutes, turning them half way through. If you brush them with a little olive oil or butter, it will give them a nice crisp crust. Hope you enjoy. Let me know if you have any other questions!

Great to have you here. Yes, you were correct, when you add the chicken to the skillet, it is already cooked and shredded.
Great site. I’m new to it and now read faithfully everyday! One quick question…I just want to make sure I understand. When your chicken is going in to the skillet, it’s already shredded at that point, right?

I’m going to watch on Sunday! I watched Cat on the other episode, and tonight I watched the burger episode. The most interesting part of the show, are the people, and their stories/recipes.
I’m not sure I love all of the commentary between Guy and Marc Summers.
I have never had a taquito. They look pretty tasty. I now have another tasty looking texmex dish on my to try list.
