Funky Frozen Banana Bites and Fab Cookies

These two desserts may have different flavors, but they’re both super easy to make! These Funky Frozen Banana Bites combine Oreos, chocolate, peanut butter and bananas, while my Fab Cookies are crunchy morsels of chocolate and cinnamon.

Peanut Butter Banana Bites and Chocolate Cinnamon Cookies

Good late Sunday night everyone! Can you believe that the Olympics have come to a close?! It all went so fast, but was so great to watch.We still have a bunch of events to catch up on that are saved on the DVR.The last thing I saw was the disasterous relay race where both the men and women dropped the baton, I’m sure that will haunt them forever.That was so sad.

So, first up are these fun frozen banana treats. Another chocolate/peanut butter combo accompanied by another favorite of mine, Oreo Cookies. These are a mess to make, but the finished product is so much fun. These are great after school snacks for the kids and I must say, I found them to be quite enjoyable too! Only 4 ingredients away from a tasty treat, ENJOY!

Peanut Butter and Chocolate Dipped Frozen Oreo Banana Bites

Bananas ready to eat
Creamy Peanut Butter
Chocolate Bark or melting chocolate of choice
Crushed Oreo Cookies

1. Peel then cut bananas into 1 inch pieces. Melt peanut butter in microwave until very soft. Roll bananas into peanut butter then place on a wax paper lined baking sheet. Place in freezer for 20 minutes or until peanut butter has firmed up. Melt chocolate according to package directions. With spoons, dip bananas into chocolate and place back on the parchment paper. Press cookies into sides of bananas so they stick in the chocolate. Stick back into freezer until frozen, about 1 hour. Serve with toothpicks or just pop in your mouth!

Next are these cookies I threw together this morning to give to some ladies and teachers at church and they were really tasty.I love the crunchy crushed granola bars in these cookies, it gives a great texture and a slight honey bite.Really good buttery crisp edges too.

Anyone else notice that you can’t buy Hershey’s Cinnamon chips at Target anymore here in AZ? I am so disappointed. I even called Hershey and asked where I could buy them and she said there is no where in AZ! What a crappy thing to do! Desperation set in, because I am using these chips in an upcoming cook-off. I found some company on Amazon.com that sells them and put in my $30 order to only find that all 6 bags were liquified when they arrived to my doorstep. I should have figured that would happen with this darn AZ heat. After a few phone calls, I got them to overnight the box to me and by some miracle they got to me in their original form! Phew, what an ordeal! Those of you who can buy them at your grocery store, feel very lucky!

If you don’t have access to cinnamon chips, no worries. White chocolate, peanut butter or butterscotch chips would be great as well. Enjoy!

Chocolate and Cinnamon Chip Crunchy Granola Crispers

2 sticks softened butter
¾ Cup brown sugar
¾ Cup sugar
2 eggs
1 teaspoon vanilla
1 ½ Cup whole wheat flour
1 Cup all purpose flour
¾ teaspoon salt
1 teaspoon baking soda
1.5 oz package Oats and Honey Crispy Granola Bars, crushed with rolling pin
1 Cup chocolate chips
1 Cup cinnamon chips (or other chips of choice if cinnamon is not available)

1. In a stand or electric mixer, beat butter and sugars until well combined. Beat in eggs and vanilla until combined, scraping edges of bowl. In a large bowl combine the flour, salt, soda and crushed granola bars. Slowly add to wet ingredients then add chips only until just combined. ***CHILL dough for at least 1 hour or freeze for 30 minutes.***

2. Once dough is chilled, preheat oven to 350 degrees F. Using a medium cookie scoop, arrange onto a parchment or silpat lined baking sheet. Bake for 9-11 minutes or until cookies are just barely golden around edges. Remove and let sit on baking sheet for 5 minutes. Transfer to cooling rack to cool completely.

    I got those little toothpicks at AJ’s Fine Foods Grocery Store in AZ. I don’t know if they have them in other states or not. Aren’t they cute? You might be able to find them online.

    Those banana bites look so temptingly delicious! I was considering using that recipe for my brown bananas, but decided that it would taste better if I were to use bananas that were slightly less ultra-ripe. I love the idea of dipping them in peanut butter…and chocolate…and cookies. Yeah, you’re just a genius, that’s all.
