I am thrilled to be hosting this Review and Giveaway for Eggland’s Best Eggs. Not only am I reviewing this product, but am offering a $100 Visa Giftcard for my readers!

Eggs are a staple in my home as I bet they are in your homes too! I was so impressed to find that Eggland’s Best Eggs contain ten times more Vitamin E than ordinary eggs, 100 mg of Omega 3,  25% less Saturated Fat, and 200 mcg of Lutein, shown to contribute to eye health. It was also comforting to find that Eggland’s Best Eggs are produced by hens that are fed an all-natural, all-vegetarian diet. Basically, these eggs are more healthy than your typical egg and that rates GREAT with me!! With all the cooking and baking I do, I want nothing but the best eggs for my family.

I was not sure if I would be able to tell a difference when cooking with Eggland’s Best Eggs, but I will tell you, there was a difference, they tasted wonderful! I will definitely be a long time consumer of Eggland’s Best!

Healthy Chocolate Chip Banana Muffins with Peanut Butter

Moist and fluffy, healthy banana muffins are loaded with creamy peanut butter and rich chocolate chips. The perfect easy breakfast idea!

Ingredients

  • 4 tablespoons softened butter
  • 2 Eggs (I use Eggland's Best Eggs)
  • 2 ripe bananas mashed
  • 1 cup low fat vanilla yogurt
  • 2/3 cup sugar
  • 1/4 cup creamy peanut butter
  • 1 1/2 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup semi sweet chocolate chips
  • 1/4 cup Turbinado sugar or another coarse sugar
  • 1/2 cup shredded sweetened coconut

Instructions

  • Preheat oven to 350 degrees F.
  • Place butter, eggs, bananas, yogurt, sugar and peanut butter into a large mixing bowl. Mix to combine.
  • Place all dry ingredients into a separate large bowl and stir to combine.
  • Slowly add to wet ingredients along with the chocolate chips until just combined.
  • Scoop into muffin tins lined with paper cups 2/3 way full. Sprinkle with coarse sugar and shredded coconut.
  • Bake for 20-25 minutes or until toothpick comes out clean from center.

Broccoli Cheddar and Sausage Egg Muffin Pull-A-Parts

These egg muffins are loaded with salty buttermilk biscuits, nutritious broccoli, gooey cheddar, and spicy hot sauce.

Ingredients

  • 6 Pillsbury Buttermilk biscuits from can, 8 count
  • pinches of kosher salt and fresh cracked black pepper
  • 1 cup cooked broccoli florets cut up into small pieces
  • 1/2 cup cooked sausage links cut up
  • 4 Eggland's Best Eggs
  • 3 tablespoons milk
  • pinches of kosher salt and fresh cracked black pepper
  • 1 cup shredded cheddar cheese
  • Cholula hot sauce

Instructions

  • Preheat oven to 350 degrees F. Spray a texas size 6 Cup muffin tin with cooking spray. You’ll have 2 extra biscuits left over. Bake them separately if so desired. Cut each of the 6 biscuits into 8 triangles and place into each muffin tin. Lightly sprinkle each biscuit cup with salt and pepper.
  • Sprinkle broccoli and sausage evenly over each biscuit filled muffin cup.
  • Place eggs, milk, salt and pepper into a mixing bowl. Whisk until well combined. Pour evenly over each cup. With a fork make sure eggs get to the bottom and around each piece of biscuit. Top each with sprinkles of cheddar cheese and bake for 28-32 minutes or until a toothpick comes out clean from center of biscuits and cheese is golden brown. Let cool for 5 minutes before removing from muffin cup. Remove and arrange onto serving plate. If you like it spicy serve with a nice hot sauce like Cholulla, it’s wonderful!! Pull them apart with your fingers or cut with a fork. Enjoy.

Silverdollar Waffle Pancakes with Blackberry Buttermilk Syrup

Light and fluffy buttermilk waffle pancakes topped with a sweet blackberry syrup made with fresh berries.

Ingredients

For the Syrup:

  • 10 fresh blackberries
  • 2 tablespoons sugar
  • 1 stick butter
  • 3/4 cup sugar
  • 1/2 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla

For the Pancakes:

  • 2 Eggland's Best Eggs
  • 3/4 cup buttermilk
  • 1/2 stick melted butter
  • 1/2 teaspoon vanilla
  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar

Instructions

For the Syrup:

  • Place blackberries and sugar into a small saucepan over medium low heat. Stir occasionally for about 10 minutes. Pour into a sieve placed over a small bowl pressing on berries to extract the rest of the liquid. Set aside; discard smashed berries and seeds.
  • Place butter, sugar and buttermilk into a separate small saucepan over medium heat. Stir and melt until mixture comes to a low boil. Remove from heat and add in baking soda and vanilla. Mixture will foam. Mix in blackberry liquid then pour syrup into a serving dish. Cover to keep warm while preparing waffle pancakes.

For the Pancakes:

  • Whisk eggs, buttermilk, butter and vanilla into a medium bowl until well combined. In a separate bowl, sift the flour, baking powder, salt and sugar. Mix into wet ingredients until just combined.
  • Place waffle pancake pan (or large skillet) over medium heat and spray with cooking spray. When hot, pour a couple Tablespoons into each waffle mold. Carefully flip after 1-2 minutes or until browned on bottom. Cook second side until golden brown. Continue to cook until all batter is used.
  • Stack waffle pancakes and pour LOTS of syrup over top, enjoy!

    I love quiche!! And, here’s how I make mine (delicious):
    bake a premade/frozen pie crust. Spread a tablespoon of prepared mustard on the bottom.

    Then, whisk together about 3 eggs and some milk or cream. Mix in chopped, fresh basil and some ground black pepper.

    Fill the baked pie shell w/ chopped, cooked ham & some shredded cheese. Pour the egg mixture over it. Bake.

    The mustard on the crust is what really gives it that extra kick!!

    Our favorite egg recipe is for German Pancakes or Dutch babies. I learned how to make these un High school home ec. class. They are probably my kids favorite breakfast ans we make them every Sunday. The recipe is so simple too. You can multiply the recipe for how many people you are feeding. For each person you will need 2 eggs, 1.2 cup flour and 1/2 cup milk. That is it! We usually do 8 eggs, 2 cups milk and 2 cups flour for our family. You mix in the blender for 2 minutes and bake at 425 for 20 minutes. Eat with powdered sugar and syrup or jam. Enjoy!

    My basic egg recipe is just egg burritos. Scrambled eggs, add salsa, shredded bacon, cheese and roll in a tortilla. One of my favorite dinners.

    We love eggs at our house too!! We go through 5 dozen a week…is that normal?? Probably not, but we do 🙂 My favorite egg recipe is our Egg Cassarole. Eggs with green chilis and cheese layered. It’s always a hit!!!!

    Deviled Eggs are our favorite. I sometimes add horseradish to spice them up a bit. I like using a cut of green chili pepper on top for a little decoration.

    we always stock up on eggs because i go through so many of them a week! my favorite thing to do is make pate a choux (cream puffs), but lately i’ve REALLY loved making breakfast (something i don’t usually do during the week) and have been craving over easy and sunny side up eggs a lot!! i also like to boil several for the week to have a hard boiled egg as a healthy snack in between meals so that i’m not munching on chips or other not so good for you stuff!!

    I actually make an egg dish every week for breakfasts that I can just stick in the microwave — no real recipe. A couple of eggs, a couple of egg yolks, some cottage cheese, whatever veggies are lying around, and some spices; just stick em in the oven at 375 for about 30-40 mins and you’re good!

    When I think of eggs, I love “Toad In The Hole”.
    Toast the bread and make a hole in the center and fry the egg inside the toast. Yummy!

    I LOVE EB! So funny, we had to borrow eggs from our neighbor (aka the Reverend from our church) when I was younger, and he explained to me that they were Eggland’s Best, showed me the EB printed in red, and told me some info about them. I’ve been hooked ever since!

    I like it simple- 3 egg whites, one egg, scrambled. NOM!!! That says EGGS to me.

    I love eggs, One of my favorites is a egg scramble of:
    Eggs
    Hickory bacon
    carmelized onions
    spinach
    monterey jack cheese

    I cook my bacon and pour out the grease and add a little butter to the pan and then carmelize my onions and then add in the other ingredients. Very yummy. Posting on Facebook

    Just plain scrambled eggs or omelets are my favorite. I fix them ALL the time and love Eggland’s. That’s all I ever buy.

    I love to make gougeres with gruyere cheese. It’s a pate a choux dough with the cheese mixed in to make it savory instead of sweet. The recipe calls for 4 eggs, which give the gougeres a nice pouf and eggy inside texture! Love it!

    To my fiance and me, weekends mean sleeping late and cooking a big breakfast at home. One of my favorite egg dishes is the ‘leftover omelet.’ Throughout the week, we will save leftovers from some of our dinner entrees and use them for omelet stuffings on the weekend. Savory, meaty, juicy dishes work best. Some of our favorites have been pulled pork bbq in a cranberry/chili sauce, slow-cooked venison roast and meat/veggie leftovers from taco night. I use 2-3 of eggland’s best free range/certified humane eggs, a little bit of milk, pepper and a cuban spice mix that I make myself. Sometimes we add gouda or cheddar cheese. Then the leftovers go inside the omelet, and we usually add a topping or side of salsa, bbq sauce and/or sriracha sauce for a kick.

    Each Christmas we have Swedish Eggs (go figure we’re Danish). The eggs are baked & cut into squares. You top them with a sour cream sauce & what ever topping your heart desires (bacon, cheese, shrimp…you get the idea.
