Last year, with Thanksgiving leftovers, I made sweet potato pancakes with cranberry syrup. They were amazing.

My favorite pancakes would have to be chocolate chip. Chocolate chip with toasted coconut, or chocolate chip with espresso in the batter, or even chocolate chip with strawberry syrup and sliced strawberries. Yumm!
