What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!
Wait until you flip through the pages of Allison’s book, she’s witty, funny and the photos are enough to make you want to make each and every one of her recipes! No kidding, I forgot that her recipes are healthy. Take a look at Amazon.com where you can get your own copy if you don’t want to gamble with the giveaway

Love this!!!!
My favorite way to cook healthy for my little family is to use my garden an d sometimes I venture to my grandfathers fruit garden. My favorite recipe is a zucchini and roasted tomato pasta, and for dessert we have fresh fruit popsicles with fruit chunks in it.
Grilled Steak Salad with caramelized onions and blue cheese crumbles with a light vinaigrette on the side.
I LOVE roasting veggies, because they require so little fat to make them delicious. Just a nice sprinkling of Kosher salt and a drizzle of olive oil and they’re delicious!

One of my favorite healthy meals is roasting a chicken with salt & pepper, and the best part lime zest! Then I use the juice of the lime on the outside and stuff the cavity with it. Once it is out of the oven I shred it for tacos! Keep the topping light and healthy. So good and always requested from my sweet husband.
I don’t have a family yet, but I love to host friends for make-your-own pizza nights in my apartment!
