What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Here’s a little more about Allison…..
Allison Fishman is a cooking teacher, food writer, and personal coach. She is the author of You Can Trust A Skinny Cook, and a contributor and the TV spokesperson for Cooking Light magazine. She was a co-host of Lifetime’s Cook Yourself Thin and TLC’s Home Made Simple. A passionate home cook, Allison has worked for Martha Stewart, Food Network, and Atkins as a food stylist, recipe developer, and cookbook editor. Her writing and recipes have appeared in Saveur, Fine Cooking, Glamour, Real Simple, and Everyday Food. Allison is the founder of The Wooden Spoon, a private cooking school designed to give modern food lovers the skills to prepare delicious meals at home, and a graduate of Cornell University and The Institute for Culinary Education. She has a Masters degree in Food Studies from New York University and recently moved from Brooklyn, NY to Montclair, NJ.

I love making grilled chicken with some simple seasonings, corn on the cob and a tomato and cucumber salad.
My favorite summer healthy meal is a fresh fruit and spinach smoothie with a small sandwich. Yum.
My favorite healthy family meal is white chicken chili. I love it because it is so easy to make and is jammed full of great veggies and lean proteins. My kids love it, too!

I <3 cooking healthy!! We love to roast veggies, use lots of fresh herbs every day (instead of fat, sugar, or salt), always use EVOO, and broil our proteins!

One of my favorite ‘healthy meals’ would be sauteed veggies(asparagus, cauliflower, broccoli, carmelized onions and peppers) with sauteed seasoned chicken. No carbs needed! Just some garlic and olive oil along with your favorite seasonings.
turkey chili! very filling and surprisingly healthy. I load it up with extra veggies too (try zucchini!)
favorite healthy meal is veggies on grill from garden and fresh fish hubby just caught also on grill, usually a big salad on side with more goodies from our garden. Nothing fancy but we all love it and very simple to prepare.
Once I week I try to make our evening meal meatless. My favorite is so easy, basically whole wheat pasta, broccoli and a can of diced tomatoes with garlic and olive oil topped off with parm and provolone cheese. Yummy. The first time I made it they didn’t notice that it didn’t have meat!
I love to cook up a big spaghetti squash!

As much as my husband and I are carnivores….sometimes (esp in the summer) we just love a big plate of sauteed veggies-zucchini, mushrooms, onions. Yum!

any kind of fish… preferably grilled… with a great salad and plenty of fresh veggies. it’s a filling and super healthy meal. yum!

our favorite go-to & healthy meal: I saute our favorite in season veggies in some olive oil with sea salt/fresh pepper & add them to plain pasta. The juice from tomatoes is usually enough for us, but you can put a little olive oil/butter on the noodles first. Topped with fresh parm – yum!
I like to make yummy salads or soups loaded with veggies salmon is a favorite too!

I love this southwestern quinoa dish i have. served over spinach? it’s divine AND healthy!

I love to make smoothies with spinach in them. They’re quick, easy, delicious, and have lots of good for you stuff in them. Lots of fruit, spinach, and milk. I even add flax seed. And honey if it needs sweetened instead of sugar.

I love making low-fat tuna noodle casserole with fresh corn inside. Top it with some delicious bread crumbs too!
