Thank you for entering. The contest is now closed and the winners have been notified 🙂

What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Wait until you flip through the pages of Allison’s book, she’s witty, funny and the photos are enough to make you want to make each and every one of her recipes! No kidding, I forgot that her recipes are healthy. Take a look at Amazon.com where you can get your own copy if you don’t want to gamble with the giveaway 🙂

As much as my husband and I are carnivores….sometimes (esp in the summer) we just love a big plate of sauteed veggies-zucchini, mushrooms, onions. Yum!

Once I week I try to make our evening meal meatless. My favorite is so easy, basically whole wheat pasta, broccoli and a can of diced tomatoes with garlic and olive oil topped off with parm and provolone cheese. Yummy. The first time I made it they didn’t notice that it didn’t have meat! 🙂

favorite healthy meal is veggies on grill from garden and fresh fish hubby just caught also on grill, usually a big salad on side with more goodies from our garden. Nothing fancy but we all love it and very simple to prepare.

One of my favorite ‘healthy meals’ would be sauteed veggies(asparagus, cauliflower, broccoli, carmelized onions and peppers) with sauteed seasoned chicken. No carbs needed! Just some garlic and olive oil along with your favorite seasonings.

I <3 cooking healthy!! We love to roast veggies, use lots of fresh herbs every day (instead of fat, sugar, or salt), always use EVOO, and broil our proteins! 🙂 I'm not sure I have on particularly-healthy-and-favorite meal.

My favorite healthy family meal is white chicken chili. I love it because it is so easy to make and is jammed full of great veggies and lean proteins. My kids love it, too!

  12. Suzanne

My favorite summer healthy meal is a fresh fruit and spinach smoothie with a small sandwich. Yum.

I love making grilled chicken with some simple seasonings, corn on the cob and a tomato and cucumber salad.

My favorite healthy meal to make is any sort of wrap! Usually I use chicken that I bake in the oven, put a little cheese on the whole wheat wrap and put that in the oven as well to make it all nice and melty 🙂 Throw on some lettuce and whatever other ingredients we are feeling at the time!

I don’t have a family yet, but I love to host friends for make-your-own pizza nights in my apartment!

One of my favorite healthy meals is roasting a chicken with salt & pepper, and the best part lime zest! Then I use the juice of the lime on the outside and stuff the cavity with it. Once it is out of the oven I shred it for tacos! Keep the topping light and healthy. So good and always requested from my sweet husband.

I like to try and make normal everyday meals a bit healthier – Sloppy Joes with turkey and wheat buns – things like that. I just try to add in more nutrients wherever I can. 🙂
