I don’t know how “light” it is – but “summer” to me means grilled peanut butter and jelly. Make your PB&J like normal (only I add extra PB!), then grill like a grilled cheese. I rarely make one in the fall or winter, for some reason it was always “summer” food! I also love kabobs – love love love! Especially because as the chef, I get to pick my favorite veggies and can skip the ones I am not a fan of. 😉
