My kitchen helpers (6 children) and I would definitely make a double ( or triple?!) batch of chocolate chip cookies. We would bake half of the cookies and freeze the other half of the dough. We go through cookies quickly at our house. Having cookie dough waiting in the freezer is a big help. My current mixer does not have a big enough bowl for double batches of some things.

I would make FRUIT CAKE!!!!!!! Christmas is less than 60 days away and I can experiment with different flavours and variations

A hand mixer doesn’t do fruit cake any justice. I know this because I broke a hand mixer once trying to mix the fruit. A Big stand mixer such as this would definitely manage the load ;) And I will send you small fruit cakes if I win :)
