I am sharing one of my recipes in the book today called Inside Out Chicken Pot Pies. It is a breeze to put together and the whole family loves it. I’ll have a video on Goodbite.com soon demonstrating this recipe!
1 sheet thawed puff pastry
1 can cream of chicken soup
1 Cup milk (I used skim and it was fine)
1 can chunk chicken, drained (from Costco)
1 can drained mixed vegetables
¼ teaspoon cajun seasoning (I use Emerils)
Pinch of salt and pepper
Pinch of garlic salt
Rosemary Sprigs for garnish, if desired
1. Preheat oven to 400 degrees F. Carefully unfold pastry onto a lightly floured counter. Cut into 9 equal size squares and place onto an ungreased cookie sheet. Bake for about 15 minutes or until golden brown. Set aside.
2. While pastry is baking, whisk together the soup and milk in a large bowl then transfer to a large skillet over medium heat. Add chicken, vegetables and seasonings. Break up chicken pieces with back of fork. Cook and stir until heated through, about 5 minutes.
3. Place puff pastry squares on serving plates and spoon chicken gravy over top. Garnish with sprigs of rosemary if desired.

Spaghetti!
Taco salad is one of our favorites! For a variety I use chicken or beef. Thanks for the give away!
Whole wheat blender pancakes are my go to. So fast, easy and I always have the ingredients!
My favorite quick meal is a two egg omelette, usually prepared with whatever veggies we have left in our fridge at the end of the week. We always have eggs and cheese, so this is a pretty reliable and easy thing to throw together, and it only dirties one skillet.
Can’t wait to try this recipe, it looks YuMMy!! I like making tomato gravy over biscuits, and everyone else must too, cuase there’s never any left….
When its quick and easy; its usually chicken and garlic spaghetti or since the babe has come along, macaroni & cheese and nuggets

My favorite quick & easy meal is stromboli. Unroll Pillsbury pizza dough, layer provolone cheese, pepperoni, sauce and mozz. cheese. Roll, bake & eat!

My favorite quick and easy meal is pizza. I like to use a ready made raw dough from the grocery and experiment with different sauces and toppings. Something new and different every time. One of my favs is a BBQ chicken pizza!
My quick and easy dinner is past or quesadillas.
Simple pizza or pasta.
I can whip up some really yummy eggs in less than 5 minutes to put in sandwiches or serve with toast and home-canned peaches. Comfort food is always a hit!
My daughter and I love to get in the kitchen and make a big ginormous salad with leftover grilled chicken!!! She likes to pretend we are at Olive Garden eating the unlimited salad they serve. Of coarse we top it off with the dressing they sell and freshly grated Parmesan cheese! Yummy:-)
My go-to quick dish is a ramen, with a little creativity, there are tons of things you can do with these noodles!
Pasta! Angel hair pasta with olive oil, fresh parmesan cheese, Baco Bits, and basil. Yummmm!
Tuna sandwiches and soup! All this week we are doing super easy stuff like that and with the added weekly therapy appointments soon to come for our little man I think I will be searching for more super easy and healthy dinner ideas.
I love to make chicken chilaquiles. Quickly fried or baked corn tortillas cut into strips, Rotisserie chicken, black beans, corn, green chilis, salsa verde, and monterey jack cheese. All layered and baked in the oven for 25 min. My families fav!

I recently made a really quick and easy Chicken and Dumplings in my slow cooker. Only a couple of ingredients and some store-bought biscuit dough – definitely is a new easy favorite! I watched the video, looks like a great book!

I love hearty salads, soups/stews, sandwiches and a great stir-fry – these are all very easy recipes, that takes almost no time to prepare
My favourite quick and easy recipe, is Spicy Shrimp Udon Noodle soup.
Steam whatever veggies I have lying around with the shrimp, add water and any seasonings I desire that day (normally, black pepper, fresh ginger, chilli flakes) bring to a boil and add pre-cooked noodles ……… dinner in less than 20 minutes
My favorite quick & easy meal to prepare is baked chicken breasts and steamed veggies. I throw a frozen chicken breast in a 425 degree oven for 25 mins. Done. While that is cooking, I steam some veggies on the stove. Done. Delicious and fast!… not to mention, HEALTHY!
