I am sharing one of my recipes in the book today called Inside Out Chicken Pot Pies. It is a breeze to put together and the whole family loves it. I’ll have a video on Goodbite.com soon demonstrating this recipe!
Inside Out Chicken Pot Pies
Equipment
- Oven
Ingredients
- 1 sheet thawed puff pastry
- 1 can cream of chicken soup
- 1 cup milk I used skim
- 1 can chunk chicken drained
- 1 can mixed vegetables drained
- 1/4 tsp cajun seasoning I used Emerils
- 1 pinch salt
- 1 pinch pepper
- 1 pinch garlic salt
- rosemary sprigs for garnish
Instructions
- Preheat oven to 400 degrees F. Carefully unfold pastry onto a lightly floured counter. Cut into 9 equal size squares and place onto an ungreased cookie sheet.
- Bake for about 15 minutes or until golden brown. Set aside.
- While pastry is baking, whisk together the soup and milk in a large bowl then transfer to a large skillet over medium heat.Ā
- Add chicken, vegetables and seasonings. Break up chicken pieces with back of fork. Cook and stir until heated through, about 5 minutes.
- Place puff pastry squares on serving plates and spoon chicken gravy over top. Garnish with sprigs of rosemary if desired.

I love to make refried black bean, spinach and mushroom burritos! My all time fastest meal I can have it ready in 30 min… love those meals!

TACOS!! We have prepared taco meat in our freezer so it doesn’t take that long.
My favorite quick and easy recipe is to boil some cheese tortellini and throw in some squash and top with parmesan cheese!
French Dips. Yum and so so easy! š

Homemade mac & cheese!
Probably the best easy dinner we make is Breakfast for dinner so pancakes or waffles!
Slow cooker chicken curry. 1 jar salsa, 10 chicken breasts, 3 tbsp. curry and a chopped onion. Through it in and cook all day. Before serving, stir in 1 cup sour cream and garnish with some cilantro. So easy and so quick to prepare!

heh – well, since I live alone, most any meal can be made to be simple. BUT the old time, mom’s quick go-to recipe is always some sort of pasta meal – depending on what’s in the fridge š
Grilled cheese–quick and easy! I like serving canned tomato soup on the side too.
If I am thinking ahead of time it would be roast-potatoes-carrots in crock pot.
If not, probably a pasta dish

My favorite quick & easy meal to prepare is baked chicken breasts and steamed veggies. I throw a frozen chicken breast in a 425 degree oven for 25 mins. Done. While that is cooking, I steam some veggies on the stove. Done. Delicious and fast!… not to mention, HEALTHY!
My favourite quick and easy recipe, is Spicy Shrimp Udon Noodle soup.
Steam whatever veggies I have lying around with the shrimp, add water and any seasonings I desire that day (normally, black pepper, fresh ginger, chilli flakes) bring to a boil and add pre-cooked noodles ……… dinner in less than 20 minutes š
I love hearty salads, soups/stews, sandwiches and a great stir-fry – these are all very easy recipes, that takes almost no time to prepare š
My favorite quick and Easy meal is Lasagna or Spaghetti….my 3 year old loves to help!
I would say our quick dinner would be Halibut Tacos with lime, and homemade salsa

I recently made a really quick and easy Chicken and Dumplings in my slow cooker. Only a couple of ingredients and some store-bought biscuit dough – definitely is a new easy favorite! I watched the video, looks like a great book!
