So excited to be helping promote my friend Jessica of Sodium Girl’s new cookbook “Sodium Girl’s Limitless Low-Sodium Cookbook.” Jessica is an amazing woman and so unbelievably talented in the Low Sodium recipes! My hat goes off to her, because if you’ve ever cooked low sodium, you know that it is not exactly easy!
To celebrate Jess’s new cookbook, I have tried my hand at a low-sodium dish that I call Roasted Red Pepper Parmesan Baked Eggs. I wanted to use bold flavors to flavor my recipe instead of salt. I think this was the first recipe that I have made that I didn’t use an ounce of salt. So proud of myself, lol,! I have to say, that these baked eggs are fantastic! I highly recommend them for any breakfast.
Huge congrats to Jessica and her new cookbook. It is absolutely beautiful. Did I mention Matt Armendariz was the photographer? You’ll get to enjoy his beautiful photography throughout the book. It’s funny, Jessica and I worked on our cookbooks the exact same time. It was so fun meeting her and sharing stories together. It truly is so fun to see your hard work come to life.

Love baked eggs, so good on all sorts of meals!
This dish sounds amazing and looks beautiful. I love roasted red peppers, they truly amp up the flavor. I’m also a huge fan of fire roasted tomatoes.
I don’t use a lot of salt at all, and never feel it’s lacking from my dishes.
Yummy! Eggs are my go-to breakfast almost every day!!

I became handicapped about 6 yrs. ago, along with depression and anxiety, I have become overweight, type 2 diabetic with high blood pressure… I have , lately have been educated by my cousin,how mixing veggies with different types of things to flavor up Veggie drinks with Flavored fruits, vinegars and herbs can change the way you think about healthy drinks instead of taking PILLS can be more productive and healthier!! I would love to win this and be better by using this Veggie Mixer!!

Trader Joe’s has a wonderful seasoning blend called Smoked South African. The first ingredient is paprika. It adds a great flavor to my scrambled eggs every morning.
This looks so good, I am going to have to try it this weekend.

I so need this cookbook. My son has a rare kidney disease called Nephrogenic Diabetes Insipidus and we have to watch his salt intake and I have been teaching myself to cook low sodium for years. I would love to win this!

I am making this right now as we speak and can hardly wait to eat it! So easy – limited ingredients, nothing special to do, but man oh man does it look spectacular!
I would LOVE to win the Vitamix; I have never had something like that. It would help me a lot – I have diabetes and would use it to make healthy things to eat and drink.
I made it last night (see my earlier post) and loved it. The only thing I wish I had done differently was to pre-grease the ramekins I used…had I done that, there wouldn’t have been any scrubbing later/this morning.
