So excited for you to try these baked eggs! Such a simple breakfast recipe for one. I have tried my hand at a low-sodium dish that I call Roasted Red Pepper Parmesan Baked Eggs. I wanted to use bold flavors to flavor my recipe instead of salt. This was the first recipe that I have made that I didn’t use an ounce of salt. So proud of myself, lol,! I have to say, that these baked eggs are fantastic! I highly recommend them for any breakfast.

Ingredients Needed

How To Make Baked Eggs

  1. Preheat oven to 350 degrees F.
  2. Place chopped roasted red peppers into the bottom of a small individual size baking dish. Top with cracked eggs then sprinkle with Parmesan Cheese. Bake for 15 minutes or until eggs are set.

Other Varieties

  1. Try adding your favorite sautéed vegetables to your eggs, top with different shredded cheeses too! I like to add some hot sauce and have a side of toast for dipping. Great with shredded rotisserie chicken as well.
