Cake Mix Bar Cookies

I love making simple cake mix cookie bars! My Gooey Biscoff Bars use a yellow cake mix as a base to make a simple to prepare cookie bar. Great to take to family, friends and potlucks. There won’t be any leftovers that’s for sure. Enjoy!

What You’ll Need

Here are the ingredients you’ll need to make cake mix cookie bars at home. See the recipe card located at the bottom of the post for full details and instructions.

  • Butter– In general, I use salted butter in my recipes. Unsalted is fine too.
  • Yellow Cake Mix– Look for Pillsbury, Betty Crocker or Duncan Hines yellow cake mixes.
  • Biscoff– find Biscoff, also called cookie butter, in the peanut butter section of the grocery store.
  • Egg– I use large eggs in my cooking and baking for consistency.
  • Chocolate Chips– If you can find mini chocolate chips, they work great. Regular size work just fine too.
  • Sweetened Condensed Milk– Find sweetened condensed milk in the baking section of the grocery store. It’s used to make the sweet glaze that gets drizzled on top of the bars.

How To Make Cake Mix Bar Cookies

Preheat Oven. Preheat oven to 350 degrees F. and line a 9×13 inch baking pan with parchment paper.

Cake Mix Into Mixing Bowl. Place cake mix, melted butter, egg and Biscoff into a large mixing bowl.

Mix To Combine. Mix until dough forms and stir in chocolate chips.

Press Dough Into Pan. Press dough into prepared baking pan.

Bake. Bake for 25-28 minutes or until baked through. Let cool for 20 minutes.

Prepare Icing. To prepare icing, heat sweetened condensed milk and Biscoff spread into a small saucepan over medium low heat until creamy and thick. Remove from heat and let sit for 5 minutes. Pour over bars and cut into squares. Serve gooey or let icing set up.

Recipe Tips For Success

  • Icing While Warm. Pour icing over bars while still warm for an extra gooey cookie bar.
  • Parchment Paper. Make sure to use parchment paper lining your baking dish before baking. It makes removing bars nice and easy.
  • Plastic Knife. I like to use a plastic knife to cut bars into squares. It cuts easy without sticking.

How To Serve

Serve these cake mix bar cookies warm cut into squares with gooey icing on top. You can even top with a scoop of vanilla ice cream.

Leftovers

Serve any leftover cookie bars in an airtight container in the refrigerator for up to 3-4 days.
