Cinnamon Cookies
These cinnamon cookie bars could not be more delicious! Brown butter, sweet cinnamon and sugar, oh my!! This dough was literally deadly. I kept going back for little tastes. Now, you will need to find some cinnamon chips. I know some grocery stores sell them, but many don’t. Keep your eyes out for them. If you are not having any luck, I found some on Amazon you can order, and trust me they are worth every penny!

What You’ll Need
Here are the ingredients you’ll need to make these cinnamon cookies at home. See the recipe card at the bottom of the post for full instructions.
- Butter– I use salted butter for my recipes. Unsalted works just fine too. The butter is browned for this recipe.
- Eggs– For consistency, I use large eggs for my recipes.
- Pure Vanilla Extract– Use pure vanilla extract for best tasting results.
- Brown Sugar– I use light brown sugar for this recipe.
- Granulated Sugar– Granulated sugar is a fine white sugar. It’s used to make the cookie bars and sprinkled on top with the cinnamon.
- Ground Cinnamon– Ground cinnamon is added to the cookie bars and also sprinkled on top of the bars.
- All-Purpose Flour– Flour is the main dry ingredient for the cinnamon cookies.
- Cinnamon Chips– Cinnamon chips can be tricky to find in every grocery store. Use white chips as a substitution.
How To Make Cinnamon Sugar Cookie Bars
Preheat Oven. Preheat oven to 350 degrees F. and line a 9×13 inch baking dish with parchment paper.
Brown Butter. Place butter in small saucepan over medium-low heat. Swirl and melt completely. Butter will boil. Continue to swirl and cook until butter turns golden brown and brown bits start forming on bottom of pan. Once butter has a nutty scent and is deep golden brown, remove from heat and transfer to a heat proof bowl. Make sure you spoon out all little black bits from the saucepan. Let brown butter cool at least 15 minutes before using in the cookie recipe.
Prepare Cookie Dough. Transfer butter to a large mixing bowl or stand mixer. Add sugar, mixing until well combined. Add eggs and vanilla, stirring well.
Dry Ingredients. Slowly add flour, cinnamon, baking soda, salt and cinnamon chips, mixing until just combined.
Transfer Cookie Dough To Baking Dish. Transfer to prepared baking dish, pressing evenly. Place sugar and cinnamon into a small mixing bowl, stirring then sprinkling over top of pressed dough.
Bake. Bake for 25-30 minutes until baked through. Remove from oven and let cool for 30 minutes then cut into square and serve.

- Watch Brown Butter Closely. You’ll need some patience when browning butter. Once it starts to brown, it happens quick. Swirl pan and remove when browned.
- Use Plastic Knife. Use a plastic knife for easy cutting into squares. No sticking.

These look delish….totally going to make them! I have found Hershey’s Cinnamon Chips at Wal-Mart, they seem to always have them. They’re not always by the regular chocolate chips, sometimes they’re across the aisle by the sprinkles (I know weird, but that’s how Wal-Mart is…)
