Treat yourself to my Springtime White Chocolate Lemon Pudding Cookies! You’ll be glad you did :)

White Chocolate Lemon Pudding Cookies

My oldest son is a lemon dessert kind of boy.  We were in the mood to make cookies a few nights ago and he said, “Mom, let’s make some lemon cookies!”  He didn’t have to twist my arm :)  We created these perfectly delicious lemon chip cookies with lemon curd as the secret ingredient.  Just enough tart and just enough sweet with the white chocolate chips.

The pudding adds such a great texture.  Give these babies a try, you won’t be disappointed!

Here’s your ingredient line-up.  Simple pantry items.  You can find lemon curd at most grocery stores by the jams and jellies.  Trader Joe’s carries it too :)

Ingredients

  • 2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup prepared lemon curd
  • 1 tablespoon lemon zest
  • 2 1/2 cups all-purpose Gold Medal Flour
  • 3.4 ounce box Vanilla Jello Instant Pudding Mix
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 1/2 cups white chocolate chips

Directions

  1. Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.
  2. Place butter and sugars into stand mixer and beat until combined. Add eggs and vanilla mixing to combine. Stir in lemon curd and lemon zest.
  3. Slowly add your flour, salt, baking soda and chips, beating until just combined. Using a medium cookie scoop, scoop dough onto prepared baking sheet about 1 inch apart. Bake for 11-15 minutes, until baked through. Remove from oven and let cool on baking sheet for 15 minutes before transferring. Store in an airtight container for longest lasting freshness.

I cannot find lemon curd anywhere. I had this problem with another recipe. And we do not live near any specialty shops or near a big city so that is not an option, can I substitute anything else?

      Jenny says:

Hi Karen, do you have any access to lemon essential oils? A few drops of that would work, or you could add 2 tablespoons lemon zest. Hope this helps!!

Made these for Easter – they were a huge hit – everyone loved them! And I have now discovered lemon curd – I think I may be eating that straight from the jar – it’s delicious!

    Christi says:

These sound yummy! I also can’t find lemon curd. Since its a half cup it’s not going to hurt the end product if it’s omitted? Also I don’t see where the pudding is added into the dough??? I can’t wait to make these.

    Misa Khan says:

    Yummy! Looking beauty full. LOL

    Josefina says:

I live in Argentina and we don’t have lemon curd, so would the lemon taste differ much more if I don’t add it? or I would just be ruining the cookies?

  28. 28

I wish I lived with someone who craves sweets! My husband is always in the mood for veggies (ugh) and not much else. Perhaps I should produce some children so I can have someone to bake with. ;)

And there’s lemon curd in these cookies?! I want, I want!

Making these cookies now! When do I add the vanilla pudding mix??! Recipe sounds so delicious.
