Banana Bread Recipe
Banana bread recipes are some of my favorite things to bake for my family. I get a little excited every time I see bananas that have gotten dark because I know I’ll be making banana bread!
Have you tried roasting your bananas before adding them to your batter? They become caramelized from the butter and brown sugar…literally a dream. Sweet and rich. So excited for you to try this new recipe!

How To Roast Bananas
Slice 2 large ripe bananas into 1/2 inch slices.
Place into ramekin or other small baking dish of choice. Top with cubed cold butter and brown sugar. Bake then remove and let cool for 10 minutes. They’ll be golden brown.
Prepare your banana bread batter…wet ingredients then dry.
Banana Bread Recipe
Transfer batter into small loaf pan lightly sprayed with cooking spray.
Place all of the streusel ingredients into a food processor. Pulse until crumbly dough starts to form. Place streusel pieces on top of banana bread batter and bake!
Let your bread cool completely before slicing. It will be worth the wait, trust me!

Roasted Banana Bread with Streusel Topping

Ingredients
Caramelized Roasted Bananas
- 2 large bananas
- 2 tbsp unsalted butter cold and cubed
- 2 tbsp packed light brown sugar
Banana Bread
- 1 stick unsalted butter softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 1 cup all purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
Oat Streusel
- 4 tbsp unsalted butter cold and cubed
- 1/4 cup all purpose flour
- 1/4 cup packed light brown sugar
- 1/4 cup oats Quaker 3 minute steel cut oats
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 400 degrees F. Place sliced bananas into a baking dish. Place butter evenly over bananas and sprinkle brown sugar on top. Bake for 25-30 minutes or until golden and bubbly. Remove and let cool for 10 minutes.
- To prepare banana bread, preheat oven to 350 degrees F. Cream butter and sugar in large bowl until well combined. Stir in egg and vanilla then roasted bananas. Add flour, cinnamon, baking soda and salt. Stir until combined then transfer to lightly greased small loaf pan.
- To prepare oat streusel place cold butter cubes, flour, brown sugar, oats and cinnamon in food processor. Pulse until mixture becomes a crumbly dough. Remove and place crumbles evenly over banana bread. Bake for 55-65 minutes, until baked through. Let cool completely then slice.

I like oatmeal raisin cookies with milk. I have never tried quick cook steel cut oats. Interesting.

I love using oatmeal to make a yummy oatmeal cake with a sweet coconut icing on top. Serve it warm and can even add a scoop of vanilla ice cream drizzled with caramel sauce. Yum!
I have to admit, my favorite way of eating oatmeal isn’t really healthy…haha…I use the oats ant make oatmeal cookies. However, in my house we use them for everything, I put oats in my meatloaf, I just love the texture that it gives it! I’m the only one that eats oatmeal in the house and I love it with blackberry yogurt, I scoop my yogurt out in the bowl and dump a handful of steel cut oats in on top of it! Yummy!
