Chocolate Covered Pecan Pie Bites

You are in for such a treat with these Chocolate Covered Pecan Pie Bites! The Holiday Season is in full swing and I’m always looking for amazing dessert recipes with options! I love that you can either make this recipe with a homemade pecan pie or if time is short, purchase a store bought. Both versions are GREAT!

After I baked a fantastic pecan pie, or pick up a great pre-baked pecan pie, I used a cookie scoop to make little pecan pie mounds. Drizzle with melted chocolate, let set and you’ve got yourself an adorable Holiday dessert that looks great on your table!

What You’ll Need

Here are the ingredients you’ll need to make pecan pie bites at home. See the recipe card located at the bottom of the post for full details and instructions.

  • corn syrup– Look for the Karo corn syrup in the baking section.
  • large eggs– For consistency, use large eggs for all of your baking.
  • granulated sugar– This fine sugar gives the pie its sweetness.
  • butter– You can use salted or unsalted butter for this recipe.
  • pure vanilla extract- For best tasting results use pure vanilla in your baking.
  • pecan halves- Find the nuts in the baking section of the grocery store.
  • pie crust– You can use a homemade crust or frozen pie crust.
  • melted chocolate– Use the Ghirardelli chocolate melts for easy melting.

How To Make Pecan Bites

You want to make sure you let your pecan pie cool completely before scooping the pie into bite size scoops. You can absolutely use a store-bought pecan pie for this recipe as well. Use a small-medium cookie scoop to form little bites then transfer to parchment paper. Make sure you get pieces of pie crust in each bite.

Preheat Oven To 350°F.  

Prepare Pecan Pie Mixture. In a large bowl, mix corn syrup, eggs, sugar, butter and vanilla using a spoon. Stir in pecans. Pour filling into pie crust.

Bake. Bake on center rack of oven for 60 to 70 minutes (see tips for doneness, below). Cool for 2 hours on wire rack before serving.

Scoop Pecan Pie Onto Parchment Paper. When pie is completely cool, use a small-medium cookie scoop and scoop baked pecan pie pieces and transfer to parchment paper.

Drizzle Chocolate Over Pie Bites. Drizzle melted chocolate over tops of bites, covering most of the bites. Let chocolate set then serve room temperature or chilled.

Recipe Tips For Success

  • Make the homemade pecan pie a day or even two in advance, so when you go to make the dessert, it’s quick and easy.
  • If you don’t have time to make your own pecan pie, use a homemade pie. It works just fine!
  • Heat your chocolate up in batches to avoid it hardening part way.

Ingredients

  • 1 Cup Karo® Light OR Dark Corn Syrup

  • 1-1/2 cups 6 ounces pecan halves

        When pie is completely cool, use a small-medium cookie scoop and scoop baked PUMPKIN PIE pieces and transfer to parchment paper.

        Is this a typo or am I missing something?

        I wish the author was responding, as I have the same question as several others; what type of chocolate? Milk, semi or bitter sweet? Dark? Almond bark? I find peacan pie very sweet, so I’ll try these with a darker chocolate, and see how it works. I really love the idea.

        If you’re just going to scoop the baked filling out of the pie crust why put it in a pie crust? Why not just put it in a baking dish and bake till done? This way you aren’t wasting a pie shell?

        I couldn’t find the instructions for how to tell when the pecan pie is done. That has been my biggest problem when making pecan pie, so I really looked. This recipe sounds just like my mother made. This covered in chocolate sounds like heaven in my mouth!!!

        You said to scoop out pumpkin pie bites but I think you ment pecan pie bites since that is the recipe given. I am sure you could do pumpkin pie bites too.

        For this recipe, do you also scoop the crust into the balls or what do you do with the crust after you scoop out pecan filling?

          The recipe states to make sure that you get some crust in each bite but I can’t imagine they’ll use up all of it. I don’t see replies to any of the comments or questions. How odd.

            I scooped a little crust into each bite and then ate the rest of the crust with bits of filling with vanilla ice cream on top! I LOVE this recipe! 😀

        In #4 of directions for Chocolate Covered Pecan Pie Bites it says to scoop pumpkin pie instead of pecan pie. Will be making these for Christmas.

        These look terrific! I will make these for parties. I just wanted to point out a typo you have. You said “scoop out the pumpkin pie pieces” I think you meant to say pecan pie pieces. Thank you for the wonderful idea.

        Cut to the chase. Buy a large piece from Costco or Sam’s and proceed to scooping. I would freeze or refrigerate before putting on chocolate to quicken the process of setting the chocolate.
