Ingredients Needed For Easy Mexican Dinner Recipe

  • ground beef- Use a lean ground beef for less fat to drain. 80% lean or higher.
  • taco seasoning– You can pick up any taco seasoning packet for the recipe. I’ve also just used my own ground cumin, paprika salt, pepper and garlic salt instead of the store packet.
  • refried beans– Use your favorite brand of refried beans for the recipe.
  • canned chopped green chilies– Find the diced/chopped green chilies in the Mexican Foods isle.
  • prepared salsa– Your favorite prepared salsa works just fine here. I use mild or medium.
  • white rice– Any cooked white rice works great. I usually keep frozen bags in my freezer for easy access. Trader Joe’s has a box in their freezer section I always keep on hand. Steam your own if you’d like as well.
  • soft taco size flour tortillas- Use flour tortillas for the recipe.
  • shredded cheddar cheese– Medium cheddar or a Mexican blend of cheeses is great.
  • fresh cilantro– Optional, but the cilantro adds a nice freshness and color to the top of the dish.

2 cups of cooked rice? Roughly how much dry rice should I make to yield 2 cups cooked?

Hi. Looks like a great dish. But in the printable recipe, several steps from the video are omitted. Just trying to be helpful. ?

Hi and thanks for the tips. I have also found several where there was issues. Never did get answer on a tube biscuit that was all dough after the cook time was up plus did add more time even. I saw somebody else had same question and got no answer. Was the one where u seperate the biscuits and put cheese and butter between and bake it in loaf pan. I did not try it again cause of wasting money and food. Thanks again.

I find this to be a lot easier if you spread the beans onto the flour tortillas first then lay then into the 13 X 9 pan. They are more stable laying on a plate & spreading with beans then to lay them on top of more beans & try spreading. Just my thought. Thanks for recipe.
