These Peanut Butter Banana Chocolate Chip Bars make the perfect back to school treat!

Peanut Butter Banana Chocolate Chip Bars

When baking with Stevia In The Raw®, it is recommended to only replace half the sugar a recipe calls for in order to achieve the proper browning, rising, and caramelizing that only sugar can provide. More than 700 calories are saved for every cup of sugar that is swapped out for Stevia In The Raw® Bakers Bag.

You’ll start this bar recipe by mashing 1 medium ripe banana with one stick of softened butter.

Stir until dough forms.

Transfer to baking dish and bake for 30-35 minutes, until golden brown and baked through.  Let cool completely, drizzle with melted chocolate and cut into squares.

Peanut Butter Banana Chocolate Chip Bars

Prep time: 10 min | Cook time: 30 min | Total time: 40 min

Ingredients

  • 1 stick salted butter, softened
  • 1 medium ripe banana
  • 1/2 cup Stevia In The Raw® Bakers Bag
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 2 tablespoons creamy peanut butter
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup mini chocolate chips
  • 1/2 cup melted chocolate

Directions

  1. Preheat oven to 350 degrees F. and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, stir and mash butter and bananas until well combined. Stir in Stevia, granulated sugar then egg, vanilla and peanut butter until well combined. Slowly stir in flour, baking soda, salt and chocolate chips. Stir until dough forms then transfer to prepared baking dish. Bake for 30-35 minutes, or until golden and baked through. Let cool completely, drizzle with melted chocolate and cut into squares to serve.
