Peanut Butter Banana Chocolate Chip Bars

You’ll start this bar recipe by mashing 1 medium ripe banana with one stick of softened butter.

Add Stevia In The Raw® and granulated sugar up next.

I added 1 tablespoon of honey to the mix as well.

One large egg up next.

A nice splash of pure vanilla extract.

A couple tablespoons of creamy peanut butter.

Dry ingredients up next!

Mini chocolate chips!

Stir until dough forms.

Transfer to baking dish and bake for 30-35 minutes, until golden brown and baked through. Let cool completely, drizzle with melted chocolate and cut into squares.

Tips For Peanut Butter Banana Chocolate Chip Bars

*Be sure to always use parchment paper to line your baking pan, makes removing the bars much easier.

*Use a plastic knife to cut into squares. This is a lifesaver as the plastic doesn’t stick to the bars.

*Serve warm, room temperature or chilled.

*Store any leftovers in an airtight container room temperature or chilled for about 3 days.

Ingredients

  • 1 stick salted butter softened
  • 1 medium ripe banana
  • 1/2 cup Stevia In The Raw® Bakers Bag
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 2 tablespoons creamy peanut butter
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup mini chocolate chips
  • 1/2 cup melted chocolate

Instructions

  • Preheat oven to 350 degrees F. and line an 8x8 inch baking dish with parchment paper.
  • In a large bowl, stir and mash butter and bananas until well combined. Stir in Stevia, granulated sugar then egg, vanilla and peanut butter until well combined. Slowly stir in flour, baking soda, salt and chocolate chips. Stir until dough forms then transfer to prepared baking dish. Bake for 30-35 minutes, or until golden and baked through. Let cool completely, drizzle with melted chocolate and cut into squares to serve.
