Hi everyone, so glad it’s Thursday! Weekend is almost here. Can hardly believe this is the last week of school for the boys. This year seriously flew. We are looking forward to summer though, can’t wait actually 🙂

This soup was created for a fun Challenge going on right now on my Giveaway page. Check it out HERE 🙂  I LOVE this soup. I wasn’t sure how it would turn out. It was one of those ideas that sounded great in my mind and I was hoping it tasted as good as I imagined. I was thrilled when I took a bite, it’s delicious. The soup got 2 thumbs up from the boys too. Lately they are tough to please, so I was glad when they gobbled up their bowls.

So, think BBQ Chicken Pizza in soup form. I will be making this soup on a regular basis now. LOVE it!

Chicken Broth, Canned Corn, Garlic and the Other Soup Ingredients

How to Make BBQ Chicken Pizza Soup

Here are your ingredients. I ended up using only 1 can of corn, so disregard the second can 🙂

Diced Onions on a Cutting Board

Chop up your onions…

Saute until softened….

Canned Corn with Peppers in a Purple Pot

Add your corn….

Give it a good stir….

Sprinkling Salt into the Chicken Mixture

Next comes the chicken broth…

Adding a Few Drops of BBQ Sauce to the Soup

And some BBQ sauce, just a little goes a long way. I only used 1/4 Cup for the whole pot. That was perfect.

Equipment

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 medium onion finely chopped
  • 2 tbsp fresh minced garlic
  • 11 oz can corn with peppers drained
  • 2 cans Swanson's chicken drained, 12 oz each
  • 1 1/2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 tsp kosher salt
  • 1 tsp fresh cracked black pepper
  • 1/4 tsp Lawry's Garlic Salt
  • 1/2 cup fresh cilantro leaves

Instructions

  • Heat the oil in a medium pot over medium heat. Once hot, saute the onions for 5 minutes or until softened.
  • Stir in the garlic, corn and chicken breast; mix to combine. Pour in chicken broth, BBQ sauce, salt, pepper, garlic salt and cilantro leaves.
  • Reduce heat to low and simmer for 5 minutes or until ready to serve.
  • Garnish each bowl with a fresh sprig of cilantro.

    This had a yummy unique flavor. I converted it to IP by sauteing the onions, then adding everything. (Instead of canned chicken, I put mostly thawed raw chicken-cut into smaller pieces so it cooked faster) Manual for 10- natural release for 6. Shred the chicken up and you are good to go

    I minced 4 large garlic cloves and boiled/shredded four boneless, skinless, chicken breasts. I had to increase the chicken broth by 1 cup (probably more next time) & used the full 1/2 cup bbq sauce as stated in the recipe-not what you recommended in the blog post. Rave reviews from picky hubby & kids!

    Made this for lunch today. Only had frozen corn on hand,and I hate cilantro, but other than that I didn’t deviate from the recipe much. I did add a little more liquid than it called for, but that was just a function of not wanting to toss out part of a can of chicken broth.

    This soup is so tasty!! I’m not a huge soup person but this was a home run. Big flavor, hearty without being too chunky, amd minimal effort. Will definitely make again.

    So I am a few months late of the original post on this soup, but when you lumped it in with a bunch of other soups to try it was the winner from the stack! My (very sick) hubby at the time needed some hot soups and I knew this would work for that left over rotisserie chicken I had, we added black beans, did frozen corn instead of can, YUMMY! Thanks for the inspiration Jenny, I am finding myself consumed by your recipe options.

    I made this last night. I used real shredded chicken breasts instead of canned. And I used fresh red and green peppers because it’s what I had on hand. I also added some red pepper flakes for heat. I liked it, but my fiance adored it. Thanks 🙂

    I made this yesterday for lunch, but it wasn’t much of a fit for my family. I think that chipotle in adobo sauce might be a good substitute for the bbq sauce though.

    Great recipe! I made a couple of changes because I didn’t have a can of peppers and corn so I just used frozen corn and chopped up a green pepper and sauted it with the onion. I also had some leftover rice in the fridge so I threw that in there too for a little more substance! Turned out great! Served it with Garlic French Bread!
