<p>This dinner makes me so happy.  It&#8217;s pure comfort food in a <a href="http://astore.amazon.com/pickpala-20/detail/B00006JSUB" target="_blank">skillet</a>, so you might want to make it asap for your family.  You are likely to have most of the ingredients in your pantry which is always nice!  I honestly use my <a href="http://astore.amazon.com/pickpala-20/detail/B00006JSUB" target="_blank">cast iron skillet </a>on a weekly basis.  They run about $20 bucks!</p>
<p>This is a nice and thick rice dish that is hearty and rich.  I like to top mine with a few dashes of hot sauce, oh baby it&#8217;s good!  Hope you enjoy friends <img src='http://picky-palate.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>I think you are going to love this new dinner recipe I developed last week!  It&#8217;s full of simple everyday pantry items we usually have and full of great Mexican flavors.</p>
<p>I made a homemade queso sauce that you will be tempted to break the tortilla chips out and dive right in&#8230;.that actually gets mixed in with the pasta and beef making a casserole the whole family is going to love!</p>

<p>Summer is coming!!  Especially for us West Coast folks.  I love breaking out my grill and preparing simple and flavorful dinner for the family.  I always have my stovetop grill handy for times like this when it&#8217;s not quite grilling time, but I really feel like grilling <img src='http://picky-palate.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>When Bush&#8217;s Beans asked if I would like to partner with them for their Bush&#8217;s Grilling Beans project this summer I said yes, yes and yes!  We are crazy about beans in our house and wait until you try the varieties of Bush&#8217;s Grilling Beans.  They are incredible!</p>
<p>I developed this simple marinated chicken drumstick recipe that pairs perfect with Bush&#8217;s Sweet Mesquite Beans.  The sweet and smokiness of the beans are finger licking good with my chicken.  Hope you enjoy!</p>

<h2>Lemon Herb BBQ Chicken with Sweet Mesquite Beans</h2>

<p>3 tablespoons Dijon Mustard</p>
<p>1/2 teaspoon dried thyme</p>
<p>1/2 teaspoon dried crushed rosemary</p>
<p>1/2 teaspoon kosher salt</p>
<p>1/2 teaspoon freshly ground black pepper</p>
<p>3 tablespoons fresh lemon juice (1 nice lemon)</p>
<p>1/4 cup extra virgin olive oil</p>
<p>1-2 pounds chicken drumsticks (4-8 pieces)</p>
<p>1. In a large bowl mix together the Dijon, thyme, rosemary, salt and pepper. Whisk in the olive oil until well combined. Add Chicken pieces, stirring marinade over chicken. Cover with plastic wrap and let marinate at least 30 minutes up to overnight.</p>
<p>2. Preheat indoor or outdoor grill over medium heat, grease with oil before use.</p>
<p>3. With grilling tongs, remove marinated chicken from marinade and carefully place onto hot grill. Grill about 5 minutes each side turning 4 times to get all sides of chicken browned. When chicken is cooked through, remove from grill and let rest for 10 minutes before serving.</p>
<p>4. Serve with a side of Bush&#8217;s Mesquite Grilling Beans and a salad of your choice.</p>

<p>I am awfully excited to share this recipe with you today!  I received some beautiful cheeses from <a href="http://www.emmirothusa.com/" target="_blank">Emmi</a> a couple days ago and I knew just what I was going to do&#8230;..make mac and cheese.</p>
<p>I added some pan fried ham pieces and once I was just about done I thought&#8230;..&#8221;I am sooo making these into little individual pot pies!&#8221;  So glad I did, they are buttery, flaky and perfectly mac and cheesy.  Hope you enjoy!!</p>

<h2>Hot Ham and Cheese Butter Dijon Skillet Sandwiches</h2>

<p>2 tablespoons extra virgin olive oil</p>
<p>6 soft dinner size rolls, split</p>
<p>4 tablespoons melted butter</p>
<p>3 slices cheddar cheese, cut in half</p>
<p>3 slices sliced ham, cut in half</p>
<p>3 slices sliced turkey, cut in half</p>
<p>2 tablespoons Dijon Mustard</p>
<p>1-2 cups shredded mozzarella cheese</p>
<p>1. Preheat oven to 350 degrees F. and drizzle 9 inch cast iron skillet with olive oil.</p>
<p>2. Brush bottom 6 rolls generously with half of the melted butter and place buttered side up in skillet. They&#8217;ll fit snugly.</p>
<p>3. Top each roll with a half piece of cheddar cheese, ham and turkey slice. Butter top 6 rolls and close sandwiches.</p>
<p>4. Brush tops of rolls with Dijon Mustard and top with shredded Mozzarella Cheese. Bake for 20 minutes, until cheese is melted and turning golden. Remove and enjoy!</p>
<p>Makes 6 small sandwiches</p>

<p>Has everyone heard of Hawaiian Haystacks?!  I had a friend over for dinner last week and she had never heard of or had Hawaiian Haystacks!  I couldn&#8217;t believe it.  We had this dinner all the time in Arizona, lol!  Maybe it&#8217;s just an Arizona thing.</p>
<p>If you haven&#8217;t had this kind of dinner before you are in for a treat.  It&#8217;s basically rice layered with a creamy chicken soup like gravy and topped with all kinds of fun toppings as you can see.  It&#8217;s great to serve when you&#8217;ve got a lot of people over so everyone can make their own style.</p>

<p>A couple weekends ago I remember thinking, I wonder what would happen if I did spaghetti in the crockpot?  Oh my goodness, I did it and it&#8217;s fabulous!  Now I am wondering why on earth didn&#8217;t I do it sooner?</p>
<p>No boiling the noodles, just throw it all into the crock pot and dinner is done a few hours later.  I added a little secret ingredient to my spaghetti&#8230;.some cream cheese that makes for a creamy dreamy sauce.  Be sure to try it <img src='http://picky-palate.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
