I LOVE using my cast iron skillet….for recipes of all kinds sweet and savory.  It certainly makes a rustic and beautiful berry crumble that I have shared with you today.  I like to describe this dessert as family style where everyone grabs a spoon and digs in together.  More fun that way.  It’s great for a special family night or Sunday dinner dessert….and it’s done in about 30 minutes, woohoo!

I love seeing the berry filling ooze out of the buttery crumble topping.  I’m salivating just thinking about it!

Once that crumble is out of the oven, let it cool for 10 minutes then top it with your favorite vanilla ice cream and dig in with your favorite people :)

Skillet Berry Crumble

Skillet Berry Crumble text 2 Ingredients

  • 12 ounces frozen or fresh blueberries (if you have fresh or frozen elderberries, those would be great)
  • 2 tablesoons corn starch
  • 2 tablepoons lemon juice
  • 1/4 cup granulated sugar

Crumb Topping

  • 1 cup all purpose Gold Medal Flour
  • 3/4 cups packed light brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 pinch kosher salt
  • 1 stick (8 tablespoons) cold unsalted butter, cubed

Directions

  1. Preheat oven to 350 degrees F.
  2. Place blueberries, corn starch, lemon juice and sugar into a 9 inch cast iron skillet over medium heat, stirring to combine. Stir and cook until bubbly and thick, about 7 minutes. Turn heat off.
  3. To prepare crumb topping add flour, brown sugar, cinnamon and salt into a large mixing bowl, stir to combine. With a pastry cutter, cut in ice cold butter cubes until small pea size balls form. This takes a good constant 5 minutes of cutting butter into flour mixture. Pour crumb topping over blueberries and bake for 25-30 minutes, until blueberries are bubbling and crust is golden and firm to the touch. Remove and serve with warm with ice cream on top.

Makes 4-6 Servings

Milky Way Ice Cream


I am so excited for my friend Susan of She’s Becoming Doughmesstic who’s book just came out called The Everything Ice Cream, Gelato, and Frozen Desserts Cookbook.

 

Susan and I have met at numerous blogging events and I just love her!  She is talented and a wonderful person.  Wait until you try her ice cream recipes!  To die for I tell you :)

Milky Way Candy Bar Ice Cream

What starts with a simple chocolate ice cream base turns in to a decadent treat with the addition of store bought marshmallow fluff. For extra wow, stir in some chocolate marshmallows and fudge sauce before freezing.

Yield One Quart

3 cups heavy cream

1 cup whole milk

3/4 cup sweetened cocoa powder

3/4 cups sugar

pinch of salt

8 ounces Marshmallow Fluff

1 tablespoon vanilla extract

3 Regular Sized 3 Milky Way Candy Bars

1. Over medium heat, combine milk, cream, cocoa powder, sugar and salt until sugar is dissolved. Remove from heat and add in marshmallow fluff and vanilla. Stir to combine.

2. Allow to chill in refrigerator for 3-4 hours, or overnight.

3. Once chilled, stir in chopped candy bar pieces and add to ice cream maker. Follow manufacturer’s instructions for freezing.

It’s safe to say that I use Ziploc products daily in our house. It has been such a pleasure partnering with Ziploc and the Insider 5 Fresh Over Project.  I love that American families everywhere are eating more fresh meals during the day. Be sure to check out the Ziploc Facebook page  for fun tips and even recipes from Rachael Ray!  There are so many great ways to eat fresh and Ziploc makes it a breeze.  I am going to highlight some of my favorite Ziploc products and why I love them!

We always have these Ziploc Snap and Seal Containers.  They are great for leftovers and my kids like to put their Lego pieces inside them too.  They come in all different sizes which are great.  We certainly keep a little of each size on hand at all times.  I love that you can hear the lid snap with just one push.

 

 

 

 

Another one of my favorites are these Ziploc Twist and Lock Containers.  These are so great because these babies are leak proof!  I love having these on hand when I make big batches of soup, so I can store the leftovers safely in these containers.  I also really enjoy storing my homemade salsas and salad dressings in these.

 

 

 

 

I don’t think my household could survive without these Ziploc sandwich bags.  Not only do I use these daily for my boys school lunches for sandwiches, crackers and or cookies.  I also use these for storing my make up, toothbrush and toothpaste when I travel….along with a zillion other things.  Love these.

 

 

 

 

My love is about equal for these Double Zipper Ziploc Freezer Bags.  I use it to freeze beef, chicken or pork.  I also freeze extra vegetables to use for another dinner as well.  When we buy in bulk, I like to store half of whatever we buy in these bags for the freezer.  These are also great to store household items for traveling.

 

 

Another favorite is these Ziploc Big Bags for obvious reasons.  I store the boys toys, ball, shoes and blankets in these convenient bags.  Very helpful for so many different things, especially for Spring Cleaning!

I am so excited to have the opportunity to work with Soda Stream.  I remember hearing all about this little machine that you can make your own soda right at home, thinking I would love to try it.  When I received my kit over Christmas Break, I quickly got to work and the whole family is having so much fun.
