Chicken Bruschetta Recipe

These little toasts are so much fun. Full of my favorite flavors: gorgonzola, chicken, lots of garlic and of course juicy bruschetta topping. If you are not a gorgonzola fan, use a good mozzarella and this will be equally as good. Wanna know what else? It only take about 5 minutes in the oven! Woohoo! Serve this fabulous toast with any Italian dish you might be serving or eat it straight up for lunch…or serve with soup 🙂 You are going to love this one.

How To Make Bruschetta

  1. Preheat oven’s broiler with rack 5-6 inches from top.
  2. To prepare bruschetta topping, place diced tomatoes, garlic, sliced basil leaves, olive oil, vinegar, salt and pepper to a large mixing bowl, stirring to combine. Taste and season with additional salt and pepper if needed.
  3. Place split bread cut side up onto a large baking sheet. Spread with butter and season with garlic salt. Top evenly with gorgonzola cheese and shredded chicken. Top with bruschetta topping and place under broiler for about 5 minutes or until bread is toasted and golden brown. Remove, cut into 2 inch slices and serve.

Ok, start with a fabulous loaf of bread. I like to use the par baked ciabatta from Trader Joes. It’s fabulous!

What Is Bruschetta?

Bruschetta in Italian means toasted bread with toppings. You can make it as simple or elaborate as you want. Assemble some quickly for a snack or invest a little more in substantial toppings and make a meal out of it. Toasted bread with olive oil, that’s the base – say, a baguette or a country-style Italian loaf. Then you need olive oil, garlic and the topping of your choice. Keep in mind, my sweet bruschetta is just for fun, obviously not your typical bruschetta.

Bruschetta Pronunciation

One thing to remember is that “CH” in Italian is ALWAYS pronounced like the English K. Therefore, SCH of bruSCHetta must be pronounced like SK, just like in ‘musketeers.

Spread both sides generously with some buttah.

Sprinkle with some good garlic salt.

The fun part, top with gorgonzola! Love it!

Top with cooked shredded chicken breast, lightly seasoned with salt and pepper.

Bake in your oven’s broiler for about 5 minutes and it will come out golden and toasted ever so lovely.

Ingredients

  • 5 firm Roma tomatoes diced
  • 2 cloves minced garlic
  • 10 large fresh basil leaves stacked, rolled then thinly sliced (chiffonade)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound Ciabatta bread or French Loaf split
  • 6-8 tablespoons unsalted butter softened
  • 1/2 teaspoon Lawry’s Garlic Salt
  • 1- 1/2 cups crumbled Gorgonzola depending on how much you like
  • 1 large chicken breast shredded

Instructions

    Oh my gosh, these are DIVINE! I made them to accompany our tortellini dinner last weekend and I was blown away. I omitted the chicken and only used about 3/4 cup cheese and it was still incredible. Love the buttery goodness and the subtle hint of balsamic vinegar. I used foccacia bread. I just can’t say enough about what a treat it was!

    Made this last night for dinner with a caesar salad! Yum. I love gorgonzola but daughter and honey don’t so I didn’t tell them! I just made it and waited for everyone to say they LOVED it to tell them what was in it. I put extra cheese on my side as well ;o)

    Yum! Question, could you freeze it? Like if I made a whole loaf of french bread but only wanted to eat half today? Probably not the bruschetta, but if you made it up to the point where you put that on, do you think it would freeze well?

      Hi Susan, I don’t see why you couldn’t freeze the garlic loaf ahead of time. Just add the bruschetta topping after defrosted.
