Chocolate Fudge Peanut Butter Cookie Stuffed Cookies
Well, I am at it again, couldn’t help myself just had to make another stuffed cookie 🙂 Here I give you my Chocolate Fudge Peanut Butter Cookie Stuffed Cookies! Yikes that’s a mouthful, wait until you sink your teeth into these big boys.
It’s no secret that I am a chocolate and peanut butter fanatic, so this was a no brainer for me, fun fun fun!
Take a peek and get yourself baking a batch of cookies 🙂
How to Make The Best Chocolate Peanut Butter Cookies
Start with the simple peanut butter cookie dough….1 cup peanut butter, 1/2 cup sugar and 1 egg. Mix and set aside.
Cream the ever so necessary butter and sugars, then add your eggs.
Vanilla time!Add those dry ingredients.
Add chocolate chips, mix and you are ready to start stuffing!
Using a small cookie scoop, scoop a ball of dough into your hand.
Using a medium cookie scoop, place one scoop of chocolate dough on top.
Do the same to the bottom side.
Very important….Grease your hands first (I sprayed them with cooking spray) and press the dough in both hands to enclose the peanut butter cookie dough. Does not have to be perfect as you can see from my picutes.
Chocolate Fudge Peanut Butter Cookie Stuffed Cookies
Equipment
- Oven
Ingredients
Peanut Butter Cookie Centers
- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1 egg
Chocolate Fudge Cookies
- 2 sticks softened butter
- 1 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 tbsp pure vanilla extract
- 1 3/4 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1 1/2 cups chocolate chips I used semi-sweet
- 1 cup cocoa powder
Instructions
- reheat oven to 350 degrees F. and line a large baking sheet with parchment paper or a silpat liner.
- Place peanut butter and sugar into a medium bowl, mix to combine then add egg, mixing until well combined. Set aside.
- In a stand or electric mixer, beat butter and sugars until well combined. Add eggs and vanilla, beating until well combined.
- Place flour, baking soda, and salt into a large bowl. Add to wet ingredients along with cocoa powder, and chocolate chips, slowly mixing until just combined.
- With a small cookie scoop, scoop peanut butter cookie dough into your hand. With a medium cookie scoop, scoop chocolate dough on top and on bottom of peanut butter dough. With hands, press chocolate dough around peanut butter dough, forming into a cookie shape. Place onto prepared baking sheet, about 1 inch apart from each other.
- Bake for 14 to 16 minutes, until cooked through. Let cool on baking sheet for 5 minutes before transferring to a cooling rack. Serve with milk.
What’s 2 sticks of butter. Butter here comes in bricks of 2 cups. I don’t think you mean 4 cups of butter. You should never use package amounts in a recipe. Package amounts are never standard.
What is a good egg replacer for this recipe? Thanks!
Turned out really good. Definitely a keeper. These were super easy to make.
Making these for my husband and the “deer hunting crew” to enjoy this weekend. They’re smelling delicious as they bake in the oven right now!!
I am making cookies for my mama for her birthday (end of this week), and I have been debating on what I was going to make…. until I saw this on Pinterest tonight! Soooooo going to make these; can’t wait! (And if she’s lucky, I may even let her have some! Hehe!)
Serena, Happy Birthday to your mom. Hope this recipe works out for you. 🙂
Is the cocoa Hershey’s unsweet or Nestle or other? Thanks! Can’t wait to try these.
Any brand unsweetened cocoa will work. I used Hershey’s.
Was wondering if you could make these into bars? Any idea? Will be making soon!!
Yes you can. I haven’t tried it though but it should work. Let me know if it works for you or not. 🙂
Can you help me tweak the recipe to make them gluten-free? They look super delish and I have a friend with Celiac’s Disease. Thanks so much.
I’m no gluten-free expert so I suggest this website to help: http://glutenfreegirl.com/category/recipes/cookies-recipes/ Most of the ingredients in this cookie may be gluten-free but you’ll want to verify yourself through research. Definitely replace the flour with a gluten-free type. Almond flour is one option. Good luck, I’m sure you’re friend will be excited!! 🙂
I was also wondering what size your scoops are. I just made this cookies (they are delicious!) but, I was only able to make 18 cookies and I had quite a bit of peanut better dough left over. Next time I may just use one med. scoop and see if that’s enough chocolate and adjust.
These look fantastic!! I think I have to make these! 🙂
Delicious! These were so good! I just had to share them on my blog. Thanks!
Hello! I’m new to your site here and I LOVE the recipes you’ve posted for everyone, thank you! I have a question for you. This recipe calls for a small scoop and a medium one. I’ve noticed that you use scoops in other recipes as well. Can you please tell me what size they actually are? There are SO many sizes and they usually have a number on them that corresponds with their size. Thank you again!
Wowzer! These are incredible! So soft, chewy gooey and yummy! A MUST for any chocolate and peanut butter lover!
Love these. My mouth is also drooling! I also smiled widely to see u pouring the vanilla in. I’m all about the flick of the wrist for measuring that as well 🙂 keep up the great work
These are so amazing!! I have never had more compliments on a cookie before in my life! They are an instant favorite 🙂 THANK YOU!!!
I made these for my wife’s cookie party yesterday. The rules were homemade cookies and there were about 30 people involved, my wife won the contest. Thank you for this great recipe and will be a lifetime follower now. Thanks.
Holy yum!! I just made these to send to my boyfriend for his birthday and I had to sneak one! These are definitely a milk and/or ice cream must have combo!! What’s “worse”? I have about 13 extra balls of peanut butter left and no more chocolate dough…so it looks like I’ll have to make another batch!! Oh darn…:). I definitely recommend making the pb balls first–with my cookie scoop I only managed to make 22 balls which I then broke in half to make sure I had enough for all the chocolate dough and ended up with 31 cookies. The extra pb balls are sitting in the freezer until the next batch!!
Thanks for another to die for recipe!!!
I definitely went to walmart today to buy Biscoffs to make those cookies…and forgot to get them!! Hopefully I remember on my next trip because I know after I fly Delta next weekend I’ll be craving them!!
These are my new favorite cookies! I made these over the weekend and Oh. My. Goodness. I wrote about it here:

Thank you for such an amazing recipe!
So glad you enjoyed the recipe Lindsey! Thanks for sharing 🙂
I made these the other night, and they are DELICIOUS! I did find the chocolate dough to be a lot more sticky than it looks in the pictures here. I thought I had done something wrong, even though I know I had measured everything correctly, so I added 3/8 C more flour. It slightly helped with the stickiness, but didn’t detract from the cookie at all. They are still soft and delicious.
I don’t like spraying my hands with cooking spray – I just can’t stand the feeling of the grease on my fingers! I dipped my fingers in water after making each cookie, and that worked just as well.
Thanks for such a delicious recipe! Everyone who has tried them has loved them, including my seven-year-old son who claims to not like peanut butter!
these are my FAVORITE stuffed cookie, they’re SOOOOOOOOO yummy – thanks for the recipe
Those look yummy, Jenny. Peanut butter always makes me love chocolate even more.
Just made them, and they taste better than the pictures! Perfect amount of peanut butter mixture to chocolate ratio…I was worried about running out. They are amazing. I’ll second the comment, serve with milk! These are decadent!
So glad you enjoyed them Sadie!!
Made these the other day, they are so delicious!!! You definitely need a tall glass of milk with these cookies, the chocolate cookie tastes just like a brownie with a hint of peanut butter:) It didn’t take long for my family to eat them up!!:) Thank you Jenny for another amazing recipe that my family and I will continue to enjoy for years to come. God bless!
i just drooled on my keyboard! This looks delicious
i printed this to make, and now my butter is sitting in a mushy pool on my counter. WONDERFUL! The printable instructions don’t tell how to put cookies together… did i miss something? i saw the instruction in the pictures of step by step…
Shalyce, email me directly so we can figure out what went wrong for you 🙂
Chocolate and pb is a favorite combination too. I’m sure these cookies taste great & they are so pretty to look at, too.
I so need to be stuffing my face with these right now!
OH MY GOSH! I don’t think my mouth could salivate any more than it is right now. Those look D-I-V-I-N-E!
Loving this site. Just found it today. I’m excited to try so many yummy and doable (unlike anything I find on the food network where I’ve never heard of the ingredients) recipes. Mmmm!!!!
Can I sub almond butter (smooth) for the PB? Not a big PB fan (I know, I know) but I love AB. What do you think?
I like everything about this post; I mean… stuffed cookies?!?
I want now, please.
I just wanted to share with you that I made your Oreo stuffed Choc. chip cookies and posted about them today on my blog. Now I will have to try the choc. fudge pb stuffed ones..
