I am sharing one of my recipes in the book today called Inside Out Chicken Pot Pies. It is a breeze to put together and the whole family loves it. I’ll have a video on Goodbite.com soon demonstrating this recipe!
Inside Out Chicken Pot Pies
Equipment
- Oven
Ingredients
- 1 sheet thawed puff pastry
- 1 can cream of chicken soup
- 1 cup milk I used skim
- 1 can chunk chicken drained
- 1 can mixed vegetables drained
- 1/4 tsp cajun seasoning I used Emerils
- 1 pinch salt
- 1 pinch pepper
- 1 pinch garlic salt
- rosemary sprigs for garnish
Instructions
- Preheat oven to 400 degrees F. Carefully unfold pastry onto a lightly floured counter. Cut into 9 equal size squares and place onto an ungreased cookie sheet.
- Bake for about 15 minutes or until golden brown. Set aside.
- While pastry is baking, whisk together the soup and milk in a large bowl then transfer to a large skillet over medium heat.Ā
- Add chicken, vegetables and seasonings. Break up chicken pieces with back of fork. Cook and stir until heated through, about 5 minutes.
- Place puff pastry squares on serving plates and spoon chicken gravy over top. Garnish with sprigs of rosemary if desired.

My favorite quick meal has got to be a stir fry. A bag of frozen chicken, a bag of veggies, some hoisin sauce, minute rice.& im done. Hubby doesn’t know I crept home from a girls day 20 min before he got home lol

I love breakfast for dinner! Crepes, eggs and bacon is one of our favorites, and it only takes about 20 minutes to make. š
Omelette with lots of fresh veggies!
Spaghetti, garden salad, and garlic bread – yum!
My favorite quick and easy meal to prepare is definitely just grilled chicken with mushrooms (covered with Kenās sun dried tomato vinaigrette dressing). I pair it with veggies and a salad or a baked potato. Mmmm!

I would say bacon cheeseburger pasta. Quick and easy!
Walking tacos!
We serve them in our area in IOWA at most school events, ball games..etc. They are a small serving size bag of Dortitos – just cut off the top of bag and crush chips, & leave in bag..top w taco seasoned meat, cheese, lettuce, sour cream & salsa!

Yum! What size can of chicken is used? Our favorite quick meal is shepherd’s pie using the already made mashed potatoes from the refrigerator section.
My favorite quick meal: homeade subs. I buy the big loaves of french bread from Sam’s club, slice them in half long ways, add turkey and cheese, wrap them in aluminum foil, and bake.
My family loves the Mexican Chicken casserole I make. Delicious!

Tacos
On busy nights I pan fry some thin chicken breasts & mushrooms that I serve over pasta with a white wine sauce. It’s seriously so easy and delicious!
My quick go-to meal is chili Mac, my kids’ favorite.
A delicious green salad with roasted chicken in it. YUM!
My favorite quick and easy recipe is a Pita Pizza with basil and tomato sauce, some bacon and of course, parmesan cheese
I make a quick and easy chicken casserole using sour cream, cream of whatever I have on hand soup, chicken, and crackers (topping) served over rice or veggies – my family can never get enough of it.

Tacos made with a mixture of black beans, diced tomatoes, onion, cilantro, and uncle ben’s ready-rice. Scoop up the filling into a flour tortilla (or big fritos!) and enjoy!
We love grilled turkey and swiss sandwiches. They are always a huge hit.

My favorite quick and easy (and the one I will always come back to) TACOS! I love tacos… Mr. Ortega, please marry me. Now that I have that confession out of the bag on public display, I will sleep easy tonight.
I love quick crock-pot meals. One of my favorites is stew meat, one can of cream of mush soup and one can of french onion soup. That is it! We eat it over egg noodles with some sour cream and it is so yummy. My picky kids love it!
Ooo, a good one is tuna croquettes. Couple cans tuna, some green onion, bit of mustard, s & p, breadcrumbs and a beaten egg to bind. Shape into patties, press into some more breadcrumbs, and pan fry. Serve on a big salad with a glass of wine. Yum!
This chicken pot pie looks wonderful! One of my favorite quick & easy meals to prepare are club sandwiches…love the layers of turkey, bacon and lettuce.
My quick and easy meal is spaghetti! My father-in-law cans spaghetti sauce in medium size jars, so itās the perfect amount for my husband and me. All I have to do is cook the noodles!
