My oldest son is a lemon dessert kind of boy. We were in the mood to make cookies a few nights ago and he said, “Mom, let’s make some lemon cookies!” He didn’t have to twist my arm 🙂  We created these perfectly delicious lemon chip cookies with lemon curd as the secret ingredient. Just enough tart and just enough sweet with the white chocolate chips.

The pudding adds such a great texture. Give these babies a try, you won’t be disappointed!

Ingredients

  • 2 sticks unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/2 cup prepared lemon curd
  • 1 tbsp lemon zest
  • 2 1/2 cups all purpose flour Gold Metal
  • 3.4 oz box Vanilla Jello Instant Pudding Mix
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1 1/2 cups white chocolate chips

Instructions

  • Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.
  • Place butter and sugars into stand mixer and beat until combined. Add eggs and vanilla mixing to combine. Stir in lemon curd and lemon zest.
  • Slowly add your flour, salt, baking soda and chips, beating until just combined. Using a medium cookie scoop, scoop dough onto prepared baking sheet about 1 inch apart.
  • Bake for 11-15 minutes, until baked through. Remove from oven and let cool on baking sheet for 15 minutes before transferring. Store in an airtight container for longest lasting freshness.

    These cookies are so so so good! Did anybody else notice she forgot to put in “directions” the pudding? Well, I always just put it in with the flower and stuff (not sifted, I just add it at the same time) and It turns out great! Try ’em! SO SO GOOD!

    These were easy prep, made a whole bunch of cookies, and they were pretty yummy. For me, not really enough LEMON, though. I added a little lemon juice and another dab of lemon curd after the first couple of batches came out. Next time I will try Lemon Pudding instead of Vanilla.

    Oh, btw, the Lemon Pudding is in the ingredients list but not in the steps as to when to add – I assumed with the flour.

    Will definitely make them again!

    hi these cookies look sooo tasty.
    Question is i came from asia country and we dont have jello and lemon curd here 🙁
    can I substitute jello with normal pudding powder and lemon curd with maybe lemon jam or lemon zest and maybe add some grated lemon peel?

    I live in Argentina and we don’t have lemon curd, so would the lemon taste differ much more if I don’t add it? or I would just be ruining the cookies?

    These sound yummy! I also can’t find lemon curd. Since its a half cup it’s not going to hurt the end product if it’s omitted? Also I don’t see where the pudding is added into the dough??? I can’t wait to make these.

    I cannot find lemon curd anywhere. I had this problem with another recipe. And we do not live near any specialty shops or near a big city so that is not an option, can I substitute anything else?

      Hi Karen, do you have any access to lemon essential oils? A few drops of that would work, or you could add 2 tablespoons lemon zest. Hope this helps!!
