What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Here’s a little more about Allison…..

Allison Fishman is a cooking teacher, food writer, and personal coach. She is the author of You Can Trust A Skinny Cook, and a contributor and the TV spokesperson for Cooking Light magazine. She was a co-host of Lifetime’s Cook Yourself Thin and TLC’s Home Made Simple. A passionate home cook, Allison has worked for Martha Stewart, Food Network, and Atkins as a food stylist, recipe developer, and cookbook editor. Her writing and recipes have appeared in Saveur, Fine Cooking, Glamour, Real Simple, and Everyday Food. Allison is the founder of The Wooden Spoon, a private cooking school designed to give modern food lovers the skills to prepare delicious meals at home, and a graduate of Cornell University and The Institute for Culinary Education. She has a Masters degree in Food Studies from New York University and recently moved from Brooklyn, NY to Montclair, NJ.

    Kabobs. They are perfect because everyone can have just that combination of meat, veggies or fruit they like AND it gets us all outside while they are grilling up!!

    We like grilled chicken salads and eat them all the time. Easy to prepare and make for summer.

    I think my all time favorite healthy meal would be a recipe from the Eat Shrink and Be Merry Cookbook called “Grill of my Dreams” – a marinated, then grilled pork tenderloin with grilled veggies. So good.

    One of my favorite meals to make is breaded chicken, tri-color pasta with some oil and basil, and steamed broccoli. It’s quick and simple, and the breading on the chicken makes it really yummy. For the breading I do something like breadcrumbs, ground flaxseed, wheat germ, garlic powder, onion powder, salt, and pepper.

    My favorite healthy meal to make is stir-fry. Easy way to get in lots of veggies!

    Lately they have been liking Green Enchilada Rice Casserole. It’s easy to put together, I almost always have the ingredients, and EVERYONE likes it!

    My family loves marinated grilled chicken. Very simple. I also grill up lots of veggies…onions, peppers, asparagus, etc. I sprinkle with lemon pepper and goat cheese when it is finished! Easy and yummy!

    I love to make whole wheat pasta with turkey sausage, mushrooms and wilted spinach. It’s filling, light, and quick!

    I love to make Chicken Parmesan for the family. I pound some chicken breasts, rub a little mayo & sour cream on the breasts so the panko bread crumbs have something to stick to and it keeps the chicken breasts moist. Cook at 400 degrees for 20 minutes. Then I pour a little tomato sauce on top with shredded whole milk mozzarella or chihuahua cheese on top. Broil for a minute or two until cheese gets brown bubbles.

    We like to do fancy salads. We will pull chicken, cut up apples, strawberries, red onions, a dash of sunflower seeds and throw it all in a bowl and mix up with a bit of balsamic vinegar or raspberry vinegar. Then, we will lay a couple of spoonfulls on top of a bed of romaine lettuce. That way we don’t get a ton of dressing, but still very flavorful and yummy!
