What a pleasure it was meeting Allison Fishman in person at the BlogHer Food Conference a few weeks ago in Atlanta. I have been dying to meet her for months since I found her fantastic cookbook! She is beautiful and so talented, so glad I had the chance to meet her. We both have the privilege of working with Wiley Publishing too, so exciting!

Here’s a little more about Allison…..

Allison Fishman is a cooking teacher, food writer, and personal coach. She is the author of You Can Trust A Skinny Cook, and a contributor and the TV spokesperson for Cooking Light magazine. She was a co-host of Lifetime’s Cook Yourself Thin and TLC’s Home Made Simple. A passionate home cook, Allison has worked for Martha Stewart, Food Network, and Atkins as a food stylist, recipe developer, and cookbook editor. Her writing and recipes have appeared in Saveur, Fine Cooking, Glamour, Real Simple, and Everyday Food. Allison is the founder of The Wooden Spoon, a private cooking school designed to give modern food lovers the skills to prepare delicious meals at home, and a graduate of Cornell University and The Institute for Culinary Education. She has a Masters degree in Food Studies from New York University and recently moved from Brooklyn, NY to Montclair, NJ.

    My favorite healthy meal to prepare for my family is baked salmon with lemon, a little butter, and dill. Served with fresh veggies and it’s perfect!

    I like to splurge (a little-not too much) on the main dish but I always serve fresh vegetables and fruit to fill up the rest of the plate 🙂 But I really love finding new healthy recipes.

    At this time of year when the garden is full of wonderful vegetables, I love to make a salad consisting of fresh chopped veggies, a little Italian seasoning, and olive oil. Grilled veggie sandwiches are also really good!

    My favorite healthy meal for my family is grilled chicken (my husband is the king of the bbq) a fresh spinach salad topped with yummy things like goat cheese and candies almonds and lots of fresh summer fruit.

    I love to make stir-fry. It is a one pot dinner and I can control everything that goes in. I like it low-sodium and tons of fresh veggies and I change up the protein so it doesn’t feel like the same thing over and over.

    My kids are big fans of brown rice and black beans. We also love chicken & corn on the grill with broccoli. They’re very picky eaters but these are the meals that satisfy everyone in my family.

    Our 18 month old seems to have put herself on an all carb diet, so I have to be creative to get her to eat vegetables and protein. She loves my easy lasagna-style pasta. I use whole wheat penne, organic tomato sauce with pureed sweet potatoes and carrots mixed in. For the cheese, I use low fat cottage cheese and shredded mozzarella. Mix in some parsley, a non-gmo free range egg and bake, and you have toddler -friendly healthy meal!
