There’s something so magical about Biscoff Cookie Butter, it goes perfect in my cookie bars today! You’re going to go nuts for these bars, can’t wait for you to try them!

What You’ll Need

  • salted butter– For most of my baking I use salted butter, but unsalted butter works just fine here too.
  • brown sugar, light or dark– When shopping for brown sugar, you’ll see light brown sugar and dark brown sugar available. I like the richness of the dark brown sugar for this cookie.
  • granulated sugar- Granulated sugar is a fine sugar commonly used in baking/cookie recipes.
  • large eggs– For consistency I use large eggs in all of my baking recipes.
  • pure vanilla extract- When shopping for vanilla, purchase pure vanilla extract for best tasting results.
  • all-purpose flour– All-purpose flour is the main dry ingredient in this cookie recipe.
  • instant vanilla pudding mix– Find instant pudding mix in the baking section of the grocery store.
  • baking soda– Baking soda helps aid in the rising of the cookie.
  • kosher salt- Kosher salt is a coarse salt commonly used in cooking and baking.
  • white chocolate chips– Find white chocolate chips in the baking section of the grocery store. You can substitute chocolate if desired.
  • Biscoff Cookie Butter– Find cookie butter in the peanut butter section of the grocery store. I have the best luck finding it at Target and Walmart.

How To Make Biscoff Cookies

  1. Preheat oven to 350 degrees F. and line a 9 x 13 inch baking dish with parchment paper.
  2. Place butter and sugars into a large mixing bowl or stand mixer. Beat until well combined, a good minute or two. Stir in eggs and vanilla, mixing until creamy and smooth. Add flour, pudding mix, salt and baking soda. Slowly mix until dough forms them stir in white chocolate chips to combine. Transfer half of the cookie dough to the baking dish, pressing until even on bottom. Spread evenly with Biscoff Cookie Butter. Use a cookie scoop to scoop remaining dough on top of Biscoff layer. Use fingers to carefully press and spread. Won’t be perfect or cover the entire area. Bake for 30-35 minutes, or until baked through in the center. Remove and let cool for 1 hour before cutting into squares.

Use a cookie scoop to scoop remaining dough over cookie butter. Use fingers to press and crumble dough over top. Won’t be spread perfectly.

Don’t worry if cookie dough doesn’t cover perfectly. It bakes up perfectly.

How To Serve Biscoff Cookie Bars

Serve bars in squares room temperature or warmed up. Try topping with vanilla ice cream too!

How To Store Leftover Bars

Should you have leftover bars, place them in an airtight container for up to 3-4 days room temperature or in the refrigerator.

    Do not get me wrong, I love this, and I’ve made it many, many times. However, I feel like there’s not enough dough. I would say I use close to 2/3 of the dough for the first layer. The top layer doesn’t cover it all. But of course it’s still delicious.

      If you can’t get the pudding, you can leave it out of the recipe. I enjoy the texture it gives to the bars, but they’ll turn out good without it as well.

    TO DIE FOR! I gave my son some extra in his lunch and he was the most popular kid at lunch :).

    It almost (barely almost) too sweet…but still a perfect treat. The vanilla pudding in the batter makes it so yummy!

    These turned out amazing but I used butterscotch chips instead of white chocolate chips. My kids loved them and now we want to try them with semi-sweet chocolate chips!
