Talking dinnertime today.  It can look so very different for every family right?  My chicken and rice recipe is just what your busy weeknights need!

Depending on the day of the week, time of day, dinnertime can be well thought out, beautifully set or easily the opposite. Some evenings are so busy that we are lucky to have even the simplest of dinners put out for our families.

Whatever your situation, don’t be too hard on yourself. There are plenty of times my kids get my finest paper plates and disposable cups  to eat their meal on. The point is that dinner doesn’t always have to be a beautiful picture perfect setting. It’s far more about what happens at the dinner table.

Dinnertime

When I can get my entire family around the dinner table for a good half hour, I feel like I have succeeded. That gives us time to enjoy our meal and talk about what went on during the kids day. Are they all sitting like perfect angels the entire time? Not a chance, but that’s real life. Are they passing my quick fix meal to each other in our finest dishes? Nope, but that is also real life.

Focusing on quality conversation during those few minutes I have everyone at the table is my goal. I know that’s what my kids will remember.

When life is busy, keeping it simple will help ease the pressure of dinnertime. Try keeping your refrigerator stocked with fresh produce so you can have vegetables on hand. Broccoli florets are my go to vegetable when time is short. Once your water is boiling on the stovetop, stir in your broccoli and it’s fork tender in about 3 minutes.

Letting go of dinnertime perfection has brought me so much more enjoyment the last few years. We focus on good conversation, delicious simple meals and family fun. That is what the kids will remember and that is real life 🙂

Chicken and Rice Casserole

Creamy Garlic Chicken and Rice Bake

Ingredients

  • 2 cups dry brown rice
  • 10 3/4 ounce can Campbell’s Cream of Chicken Soup
  • 1/2 cup milk
  • 3/4 teaspoon garlic salt
  • 2 cups cooked shredded chicken
  • 4 cups gently steamed broccoli florets
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat oven to 350 degrees F. and lightly spray a 9×13 inch baking dish with cooking spray.
  • Cook rice according to package directions. Transfer rice to large bowl. Stir in soup, milk, garlic salt, chicken and broccoli. Transfer to baking dish and top with cheese. Bake for 20 minutes, until hot and cheese melted.
