Meat and Taters Dinner…..and Cookies For Dessert

So, we just got back from a great weekend in AZ. It was so nice to see our family and friends. What about those AZ Cardinals huh? I’m pretending to be a sports fan here. I just know how excited my hubby and other male family members are for this crazy win!

I’ve got a great weeknight dinner here. These little meatloaves are great individual servings for everyone and taste incredible. It’s best to free form them and place them on top of a baking rack that is placed over a baking sheet, so the juices have somewhere to go. I found these cutest little dutch potatoes at the grocery store here in Newport. They are cute as a button and are about the size of a button. I certainly never saw these in AZ, so any cubed potato would work in it’s place. This is a satisfying and hearty meal that the whole family will enjoy, toss in a salad, and you are good to go!

Petite Meatloaves and Garlic Herbed Dutch Potatoes

Petite Meatloaf

1 lb lean ground beef

2 eggs, beaten

3 Tablespoons milk

1 Tablespoon mustard

3 cloves fresh garlic

½ Cup grated parmesan cheese

½ Cup fresh bread crumbs (you can use the ones you get at the grocery store too)

½ teaspoon salt

¼ teaspoon fresh cracked black pepper

½ teaspoon Tabasco sauce

¼ Cup ketchup

6 strips ready bacon (that kind you get at Costco and you just have to microwave it)

1. Gently combine all ingredients with hands into a large bowl until just combined. Form into 6 mini loaves and place onto a baking rack lined baking sheet. Lightly brush tops with ketchup and top each with 2 bacon halves. Bake for 20-25 minutes or until cooked through.


Garlic Herbed Dutch Potatoes

1 lb Dutch Potatoes, left whole, or any potato of choice cut into same size ½ inch pieces

1 teaspoon salt

¼ teaspoon garlic salt

3 cloves garlic, minced

3 Tablespoons fresh parsley, finely chopped

1. Preheat oven to 375 degrees F. Place all ingredients into a large bowl. Toss to combine. Place onto a large baking sheet and bake for 30-40 minutes or until fork tender.

Oatmeal Butterscotch Toffee Chip Cookies

2 sticks softened butter

¾ Cup sugar

¾ Cup brown sugar

2 eggs

1 teaspoon vanilla

2 ½ Cups flour

½ Cup quick oats

1 teaspoon baking soda

½ teaspoon salt

2 ½ Cups butterscotch chips

1 Cup toffee chip pieces

1. Preheat oven to 375 degrees F. In a stand or electric mixer cream butter and sugars. Beat in egg and vanilla until well combined. In a large bowl combine flour, oats, baking soda and salt. Slowly add to wet ingredients along with the butterscotch chips and toffee bits just until combined.

2. With a medium cookie scoop, scoop onto a silpat or parchment lined cookie sheet. Bake for 9 minutes or until cooked to your liking. Let cool for 5 minutes before removing.
