My Pumpkin Snickerdoodle Cake Bars are about to made your day!  Ahhhh, simple desserts are my favorite.  When you need a dessert to bring to friends, a party or potluck these are your bars.  Fun festive pumpkin flavor with delicious cinnamon sugar topping!

Prepare Cake Mix

Pumpkin Snickerdoodle Cake Bars

Place your softened/partially melted butter and cake mix into a large mixing bowl.  Stir to combine slightly.

1 cup of pumpkin puree.

Add Cinnamon Chips

Cinnamon chips!  These are so yummy.  Keep an eye out at your grocery store, they seem easier to find around baking season.  You can always order them on Amazon if you can’t find them.

Add a teaspoon of cinnamon to the batter.

Transfer Dough To Baking Sheet

Transfer to a 9×13 inch baking dish lined with parchment paper.

Top With Cinnamon and Sugar Then Bake

Tips For Pumpkin Snickerdoodle Cake Bars

*Use a plastic knife to cut the bars into squares.  Doesn’t stick to bars, one of my favorite tricks.

*Try also serving bars warm with a small scoop of ice cream on top.

*Store leftovers in an airtight container.  They’re delicious chilled too.

Ingredients
  • 1 box yellow cake mix
  • 1 stick unsalted butter softened
  • 1 large egg
  • 1 cup pumpkin puree such as Libby's
  • 1 cup cinnamon chips
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
Instructions
  1. Preheat oven to 350 degrees F. and line a 9x13 inch baking dish with parchment paper.
  2. Place cake mix, butter and egg into a large mixing bowl, stir to combine then add pumpkin, cinnamon chips and ground cinnamon. Press mixture into prepared baking pan. Place sugar and cinnamon into a small bowl to combine then sprinkle over top of bars. Bake for 25 minutes, until baked through. Remove and let cool for 30 minutes before cutting into squares.

    Que legal esse bolo de abóbora,já comi bolo de cenoura,aliás é muito bom,mas de abóbora nunca comi mas acredito que seja muito bom por que abóbora em si é muito saborosa.

    Made this recipe and they did not have any integrity at all. They fell apart when I tried to cut them out to take them to a special event but was not able to bring them. Disappointed, they did taste good though.
