Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh minced garlic
  • 4 cups cooked white rice
  • 1 1/2 cups mild salsa verde prepared
  • 3 tablespoons Old El Paso Taco Seasoning
  • 2 cups cooked shredded chicken
  • 1 cup black beans drained and rinsed
  • 1 cup grape tomatoes quartered
  • 1/4 cup fresh cilantro chopped

Instructions

  • Heat oil in 12 inch cast iron skillet over medium heat.
  • Sauté garlic then stir in rice. Stir in salsa, Old El Paso Taco Seasoning, chicken and black beans. Stir to combine and let cook/heat for 10 minutes, or until hot.
  • Top with quartered tomatoes and fresh chopped cilantro. Serve warm.
