What You’ll Need

Here are the ingredients you’ll need to make this strawberry shortcake bake at home. See the recipe card located at the bottom of the post for full details.

  • 4 cups sliced strawberries– Wash, gently dry and slice fresh strawberries. Don’t use frozen berries here.
  • 1/2 cup granulated sugar– This fine white sugar adds sweetness to the French Toast Bake.
  • pound cake– Look for Pound Cake or Angel Food Cake often times in the produce area of the grocery store near the strawberries.
  • large eggs– For consistency, I use large eggs in my cooking and baking.
  • heavy cream– Heavy cream is part of the wet egg ingredients. Don’t substitute the cream.
  • light brown sugar– You’ll use brown sugar that adds some sweetness to the bake.
  • pure vanilla extract– For best tasting results use pure vanilla.
  • kosher salt– Kosher salt is a course salt commonly used in cooking and baking. I prefer it over table salt.
  • powdered sugar– Also called confectioners sugar. You’ll use this sugar to sprinkle over top of the French Toast Bake.
  • whipped cream- The whipped cream in the can in the dairy section of the grocery store or homemade is even better.

How To Make Strawberry Shortcake French Toast Bake

  1. Marinate Strawberries. Place sliced fresh strawberries in a large mixing bowl and sprinkle with sugar. Use spoon to stir to combine sugar and berries. Cover and let marinate for at least an hour or overnight covered in the refrigerator. You get a nice sweet strawberry juice the longer the strawberries marinate.
  2. Preheat Oven to 350 Degrees F. and spray a 9 x 13 inch baking dish with cooking spray.
  3. Pour Egg Mixture Over Pound Cake Cubes. Place cubed pound cake evenly in bottom of baking dish. In large bowl whisk eggs, heavy cream, brown sugar and salt until well combined. Pour evenly over pound cake in baking dish. Use spoon to press gently to make sure egg mixture covers all pieces. Bake for 30-35 minutes until set. Remove from oven and let cool for 20 minutes before cutting into squares. Dust top of French toast bake with powdered sugar.
  4. Prepare Whipped Cream. You can use canned whipped cream or make your own. To make your own whipped cream, place heavy whipping cream into a stand mixer with whisk attachment and add powdered sugar. Beat until cream has firmed up to the consistency you desire.
  5. Serve. Top each square of French toast bake with marinated strawberries and a dollop of whipped cream.

Where Can I Buy Pre-made Pound Cake For The Recipe?

In many grocery stores, you can find pre-made pound cake in the produce section. It’s generally be by the shortcake shells and pre-made strawberry sauce, below the fruit displays. I get the loaf pound cake and cube it myself. If you can’t find pound cake, brioche is a great substitute. French Bread can also be cubed and used if needed.

Make sure pound cake pieces are well coated with egg mixture. Use a spoon to press cake into egg mixture when needed. Bake at 350 degrees F. for 30-35 minutes until egg mixture is set. Remove and let cool at least 20 minutes before cutting into squares.

How Do You Marinate Strawberries For Strawberry Shortcake?

To get those nice sweet juicy strawberries for strawberry shortcake, the trick is to let them marinate in sugar for a few hours or overnight if you’ve got the time. For this recipe, you’ll need 4 cups sliced fresh strawberries and 1/2 cup granulated sugar. Stir well, cover and let marinate. Sweet and perfect for strawberry shortcake!

How To Serve Strawberry Shortcake French Toast Bake

Serve each square of French Toast Bake with a spoon of marinated strawberries and a dollop of whipped cream.

How To Store Leftovers

Store any leftover squares of strawberry shortcake without toppings in an airtight container in the refrigerator for up to 3-5 days. Warm in microwave as needed then top with strawberries and whipped cream.

Is There An Option For an Overnight Breakfast Casserole?

Yes! Prepare recipe up until the point of before baking it. Cover with plastic wrap and refrigerate overnight. When ready to bake, let dish come to room temperature for an hour and bake as directed following instructions from there.

    Delicious and easy! FYI: vanilla was listed in ingredients, but was not in the directions. Make sure vanilla is added when you mix eggs, cream, salt, and brown sugar.
