Pumpkin Snickerdoodle Cake Bars

Ingredients

  • 1 box yellow cake mix
  • 1 stick unsalted butter softened
  • 1 large egg
  • 1 cup pumpkin puree such as Libby's
  • 1 cup cinnamon chips
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat oven to 350 degrees F. and line a 9x13 inch baking dish with parchment paper.
  • Place cake mix, butter and egg into a large mixing bowl, stir to combine then add pumpkin, cinnamon chips and ground cinnamon. Press mixture into prepared baking pan. Place sugar and cinnamon into a small bowl to combine then sprinkle over top of bars. Bake for 25 minutes, until baked through. Remove and let cool for 30 minutes before cutting into squares.
