Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 5 boneless skinless chicken thighs
  • 2 tablespoons Ranch Dressing Seasoning mix
  • 1 pound cooked bacon strips cut into 1/2 inch strips (I used microwave bacon)
  • 1 pound baby red potatoes as small as you can find

Instructions

  • Heat oil in large skillet over medium heat. Season both sides of chicken thighs with salt and pepper. Place into hot skillet to brown both sides, 3-4 minutes per side or until golden.
  • Season tops with Ranch Dressing Seasoning and add bacon pieces and arrange baby red potatoes in between chicken pieces.
  • Reduce heat to medium-low and cover skillet partly with lid, leaving a small opening and cook for 20-30 minutes, or until chicken is cooked through and potatoes tender.

Notes

Serve with a side salad and bread if desired.
