  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 5 boneless skinless chicken thighs
  • 2 tablespoons Ranch Dressing Seasoning mix
  • 1 pound cooked bacon strips cut into 1/2 inch strips (I used microwave bacon)
  • 1 pound baby red potatoes as small as you can find

  1. Heat oil in large skillet over medium heat. Season both sides of chicken thighs with salt and pepper. Place into hot skillet to brown both sides, 3-4 minutes per side or until golden. Season tops with Ranch Dressing Seasoning and add bacon pieces and arrange baby red potatoes in between chicken pieces. Reduce heat to medium-low and cover skillet partly with lid, leaving a small opening and cook for 20-30 minutes, or until chicken is cooked through and potatoes tender.

Recipe Notes

Serve with a side salad and bread if desired.
