Ingredients
3tablespoonsextra virgin olive oil
1cupchopped white onion
1cupdiced carrots
1cupdiced celery
1tablespoonminced garlic
50ounceschicken broth
3cupscooked shredded chicken
4cupscooked thin noodles
1/4teaspoonkosher salt
1/4teaspoonfreshly ground black pepper
1/4teaspoongarlic salt
1tablespoonground cumin
1cupsalsa verdemild
1limejuiced
1/2cupchopped fresh cilantro
Instructions
Heat oil in a large dutch oven over medium heat. Saute onion, carrots, celery and garlic. Cook and stir for about 10 minutes, until slightly softened. Stir in chicken broth, chicken, noodles, salt, pepper, garlic salt, cumin, salsa verde, lime juice and cilantro. Simmer on low for 15 minutes then serve.
