3tablespoonsextra virgin olive oil
1large onionfinely chopped
1poundlean ground beef
1poundchorizo
2cupschicken broth
2 10ouncecans Rotel tomatoesmild
3 15ouncecans pinto beansdrained
1 6ouncecan tomato paste
3tablespoonschili powder
2tablespoonsground cumin
1/2teaspoonkosher salt
1/4teaspoonfreshly ground black pepper
1cupdiced avocadocilantro and tortilla chips for garnish
1bag tortilla chips
Instructions
Heat oil in large dutch oven. Saute onion for 5 minutes, stirring often until softened. Add beef and chorizo, stirring and cooking until browned. Add broth, tomatoes, tomato paste, chili powder, cumin, salt and pepper.
Transfer to slow cooker and cook on low for 2-5 hours.
Top bowls of chili with avocado, cilantro, tortilla chips and sour cream if desired.
