Ingredients

  • 2 tablespoon salted butter softened
  • 2 tablespoons granulated sugar
  • 2 tablespoons dark or light brown sugar packed
  • 2 tablespoons beaten egg
  • 1/2 teaspoon pure vanilla extract
  • 7 tablespoons all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/4 cup white chocolate chips
  • 10 pink and white Circus Animal Cookies

Instructions

  • Preheat oven to 350 degrees F. and line a large baking sheet with parchment paper.
  • Place butter and sugars into a medium bowl and stir until well combined. Add beaten egg and vanilla stirring until well combined. Add flour, baking soda and salt. Stir until just combined. Stir in white chips until combined. Use a large cookie scoop or ice cream scoop to place dough onto center of baking sheet. With spoon, press dough into a round flat cookie shape. Top evenly with pink and white Circus Animal Cookies. Top with additional sprinkles if desired. Bake for 12-14 minutes, until edges are just turning golden brown. Remove from oven and take a plastic or regular butter knife to go around edges to make round and push edges in to form a little texture if desired. I do this with most of my cookies to help out the shape if needed. Let cool for 15 minutes before transfering.
