Chocolate Chip Oatmeal Cookies
2sticksunsalted buttersoftened
3/4cupgranulated sugar
3/4cuppacked light brown sugar
2large eggs
1tbsppure vanilla
2 1/2cupsall purpose flour
1cuprolled oats
1tspbaking soda
1tspkosher salt
2cupssemi-sweet chocolate chips
2sticksunsalted buttersoftened

3-4cupspowdered sugar
1tspvanilla
2tspmilkor heavy cream
Instructions
Chocolate Chip Oatmeal Cookies
Preheat oven to 350 degrees F. and line a baking sheet with a silpat liner or parchment paper.
Cream your butter and sugars into a stand or electric mixer until well combined. Add eggs and vanilla mixing until well combined.
Place flour, oats, baking soda and salt into a large bowl. Mix to combine. Slowly add to wet ingredients along with chocolate chips, mixing until just combined.
Scoop dough onto prepared baking sheet about 1 inch apart. Press cookies down to about 1/2 inch before baking. Bake for 11-14 minutes, until edges start to turn golden brown.
Let cool on baking sheet for 10 minutes before transferring to cooling rack. Let cool completely.
Vanilla Frosting
Place softened butter into stand or electric mixer beating until smooth. Slowly add powdered sugar until thick and creamy. Add vanilla and milk until smooth and creamy. You can add more powdered sugar for a thicker frosting if desired.
Frost half of your cookies with frosting on the flat/bottom side. Dip edges in your favorite sprinkles and top with another cookie to create the sandwich. Enjoy with a cold glass of milk.
