Ingredients
2tablespoonsextra virgin olive oil
2poundsground turkey
2tablespoonsRanch Dressing dry seasoning mix
2tablespoonsground cumin
1/4teaspoonkosher salt
1/4teaspoonblack pepper
1/4teaspoongarlic salt
15ouncecan corndrained
two 10 ounce cans diced tomatoes with green chiliessuch as Rotel (mild)
15ouncecan black beansdrained
15ouncecan kidney beansdrained
6ouncestomato paste
1/2cupprepared salsa
1/2cupchicken brothor more if you'd like.
1/4cupchopped fresh cilantro for garnish if you'd like
Instructions
Place olive oil in a large pot over medium heat. When hot, add turkey, Ranch seasoning, cumin, salt, pepper and garlic salt. Cook and stir to combine and brown. When turkey is browned, add corn, tomatoes, beans, tomato paste, salsa and chicken broth. Stir to combine and let cook for 15 minutes. Reduce heat to low to simmer until ready to serve. Garnish top of chili with fresh cilantro if desired. We like to serve our chili with shredded cheese, sour cream, green onion, and salsa.
