Ingredients

  • 10 oz box couscous
  • 15 oz can artichoke hearts chopped
  • 1 cup almonds slivered
  • 1 cup sundried tomatoes
  • 1 cup parmesan cheese shredded or grated
  • 1/4 cup Italian dressing
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 handful arugula leaves

Instructions

  • Cook couscous according to package directions. Toss to fluff and chill until cooled.
  • Add rest of ingredients, stirring to combine. Serve or chill until ready to serve.
