Ingredients

  • 1 cup fine Almond Flour I use Bob's Red Mill
  • 1/2 cup Dark unsweetened Cocoa Powder I used Hershey's Special Dark
  • 1/3 cup Lakanto Monkfruit Sweetener Golden
  • 1/3 cup Lakanto Monkfruit Sweetener Classic
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 large eggs
  • 1/3 cup coconut oil melted
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup 85% Dark Chocolate Chunks optional

Instructions

  • Preheat oven to 350 degrees F. and line an 8x8 inch baking dish with parchment paper.
  • In a large mixing bowl, add the almond flour, cocoa powder, both sugar substitutes, baking powder and salt. Stir until well combined then add eggs, coconut oil, and olive oil. Stir just until batter is combined then transfer to baking dish. Using a spoon that's been coated in coconut oil, press evenly into pan. Top with dark chocolate chunks if desired. Bake for 20 minutes, remove from oven and let cool completely. Cut into squares and serve.

Notes

To make Keto Brownies, you'll need to invest in some new baking products such as almond flour and Lakanto Monkfruit Sweeteners with erythritol. I purchased the golden which is in place for traditional brown sugar and the classic which replaces traditional granulated sugar. I found all of these products at Sprouts. Other health foods stores should carry them along with ordering on Amazon if needed.
