Ingredients

  • 2 large overripe bananas mashed
  • 3 large eggs
  • 4 tablespoons Lakanta Monkfruit Sweetener with Erythritol Classic
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon extra virgin olive oil
  • 2 cups super-fine almond flour I use Bob's Red Mill
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 cup Lily's Sugar Free Dark Chocolate Chips
  • 1/4 teaspoon ground cinnamon

Instructions

  • Preheat oven to 350 degrees F. and spray a regular loaf pan with non stick cooking spray.
  • Place mashed bananas, eggs, erythritol, vanilla and olive oil into a large mixing bowl. Stir until well combined. Add almond flour, baking powder, cinnamon, salt, and chocolate chips. Stir to combine. Transfer batter to prepared loaf pan and sprinkle with cinnamon. Bake for 30-35 minutes, until baked through. Use a toothpick to check center of bread for doneness. Remove from oven. Use a knife to loosen edges. Let cool for 30 minutes before cutting into slices.
