Chicken Burritos are a simple weeknight dinner that will fill you right up with onions, spicy peppers, and juicy chicken! The best part about this easy chicken dinner is that it's totally customizable.
¼cupsweet peppers (mini bell peppers)finely chopped
2cupsrotisserie chickenshredded
½teaspoonkosher salt
½teaspoonground cumin
¼teaspoonblack pepper
14.5ouncesdiced tomatoes with green chilies(I used a 14.5-oz can)
2cupsromaine lettucefinely shredded
½cupshredded cheddar cheese
½cupprepared ranch dressing
¼cupprepared salsa
8uncooked tortillasor cooked tortillas of choice
Instructions
Cook Spanish rice according to package directions. Set aside. In 10-inch non stick skillet, heat olive oil over medium heat. Add onion, garlic and peppers. Cook 3 to 5 minutes or until vegetables are tender, stirring frequently.
Stir in chicken, salt, cumin, black pepper and tomatoes with green chilies; cook 5 minutes.
Mix ranch dressing and salsa in a small bowl until combined. Place chicken mixture, rice, lettuce, cheese and sauce inside tortillas. Fold and serve.
