Sesame Mandarin Quinoa Salad is a cold salad that is perfect for lunch or a light dinner! This mix of quinoa, sweet mandarin oranges, and veggies is a must-try!
1cupBob's Red Mill Organic Whole Grain Quinoauncooked
⅓cupextra virgin olive oil
1tablespoonbalsamic vinegar
1tablespoonsugar substitute(like Splenda or something similar)
2tablespoonssesame oil
pinch of kosher salt and fresh cracked pepper
½cupsweet pepperschopped (found a big bag of these at Costco, they are small and very mild - great flavor)
¼cupchopped green onionsthe green part
¼cupfresh parsleychopped
¼cupcrumbled feta cheese
1cupmandarin oranges
Instructions
Prepare quinoa according to package directions. Transfer to a large bowl to cool.
In a small bowl whisk the oil, balsamic vinegar, sugar substitute, sesame oil, salt and pepper until well combined. Pour over cooled quinoa and mix to combine.
Add the sweet peppers, green onions, parsley, feta and mandarin oranges. Refrigerate until ready to serve.
