Shredded BBQ Chicken Sliders with Creamy Cole Slaw
These Shredded BBQ Chicken Sliders are out-of-this-world tasty. Juicy chicken covered in homemade barbecue sauce with creamy coleslaw on the side? Yes, please!
2large boneless skinless chicken breasts cooked and shredded (I pressure cook mine)
For the Coleslaw
16ouncescoleslaw mix(I used a 16-oz bag)
½cupmayonnaise or miracle whip
2tablespoonssugar
1tablespoonDijon Mustard
1teaspoonhoney
Whole wheat dinner rollsI used Alpine Valley (they were awesome, found them at Costco)
Instructions
Combine all ingredients into a medium saucepan over medium low heat. Cook for 15 minutes, stirring often. Reduce heat to low and stir in shredded chicken. Let simmer.
Place cabbage into a large bowl.Place mayonnaise, sugar, mustard and honey into a small bowl and mix together.Pour and stir into cabbage until combined.
Spoon BBQ chicken onto bottom rolls. Top with a spoonful of coleslaw then close with top rolls. Enjoy!
