Ingredients
2tablespoonsextra virgin olive oil
½white onionfinely chopped
1anaheim pepperfinely chopped
4medium carrotsdiced
2cupsfresh baby spinach leavesthinly sliced
3cloves fresh garlicminced
42ounceschicken broth(I used 3 14-oz cans)
2large boneless chicken breastscooked and shredded
2cupscooked brown rice
½teaspoonsalt
¼teaspoonpepper
¼teaspoongarlic salt
¼teaspoonCajun seasoning(I used Emerils)
Instructions
Place olive oil into a large dutch oven or pot over medium heat. Saute the onion, pepper, carrots and spinach leaves for 8-10 minutes, stirring frequently. Stir in garlic; stir for 1 minute.
Stir in chicken broth, chicken, rice, salt, pepper, garlic salt and Cajun seasoning. Reduce heat to low and simmer for 15-30 minutes. Taste and season with additional salt if needed.
Serve with crackers. If you’re feeling crazy, stir in a Tablespoon or 2 of heavy cream. Mmmmm! Enjoy!
