  • 3 tablespoons finely chopped roasted red peppers
  • 2 eggs
  • 1 teaspoon freshly grated Parmesan Cheese


  • Preheat oven to 350 degrees F.
  • Place chopped roasted red peppers into the bottom of a small individual size baking dish. Top with cracked eggs then sprinkle with Parmesan Cheese. Bake for 15 minutes or until eggs are set.
